Brined Turkey Loins

A delicious way to cook turkey loins
- RUB:
- 1 tablespoon dry rubbed sage
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon granulated onion
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 lemon, zested
- 1 tablespoon canola oil
- BRINE:
- 6 quarts water (I used much less... just enough to cover the loins)
- 1/2 cup kosher salt (easy here, was originally 1 cup)
- 1/3 cup brown sugar
- 1/2 cup molasses
- 7 fresh sage leaves
- 1 tablespoons black peppercorns
Pesto Pasta Salad

Was looking for a quick side dish and this is a winner
- 8 ounces pasta (any shape works)
- 5 ounces basil pesto
- 6 ounces Feta, crumbled (seasoned if possible)
- 2/3 cup Kalamata Olives, pitted & sliced
- 1 shallot, diced
- Juice of 1/2 lemon
- Salt
- Pepper
Breakfast Nests

This is a simple comfort recipe which is super easy and kid friendly
- 1 package refrigerated biscuits, 8-count
- 1 tablespoon butter
- 1/2 cup cheddar cheese
- 4 slices ham
- 4 large eggs
- Chives, optional
- Paprika, optional
Stuffed Mushrooms

Pretty tasty shrooms. My 10 yr old actually asks for these quite often (and he's picky)
- 12 whole fresh mushrooms (about 1 1/2 in across)
- 1 tablespoon vegetable oil
- 1 tablespoon minced garlic
- 2 Scallions
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup grated Parmesan cheese
- + Sprinkle Parmesan on top
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground cayenne pepper
- 1 can lump crabmeat
- 1 piece of cooked bacon, chopped
Pork Wellington

A delish take on Beef Wellington
- 1 whole egg
- 1 tablespoon water
- 1 ounce dried apples chopped (or fruit of choice; peaches, etc...)
- 1 whole pork tenderloin, approximately 1 pound
- 4 1/2 ounces thinly slice prosciutto ham
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon chopped fresh thyme leaves
- 1 teaspoon all-purpose flour
- 1 sheet puff pastry, thawed completely
- 1 tablespoon whole-grain mustard
BBQ Pulled Pork Egg Rolls

These yummy egg rolls are a great way to use up your leftover BBQ pulled pork
- Leftover Pulled Pork (re-heated)
- 4 to 8 eggroll wrappers
- Cole slaw mix (not dressed)
- Ranch dressing or seasoning
- BBQ Sauce
- Water
Red Curry Beef with Bamboo Shoots

This is my take on a Beef Gaeng Daeng dish I used to get at my favorite Thai restaurant
- 1.5 - 2 pounds 1.5 - 2 pounds Stewing Beef, cut into 1 inch chunks
- 1 Teaspoon salt
- 1 Teaspoon freshly ground pepper
- 1 Tablespoon canola oil
- 1 large Yellow Onion, sliced
- 4 Garlic Cloves, minced
- 1/2 cup Thai Red Curry Paste
- 1 (13.5-ounce) can Unsweetened Coconut Milk (or 2 cans for more of a 'soup')
- 2 Tablespoons Thai or Vietnamese Fish Aauce
- 2 Tablespoons fresh Lime Juice
- 2 Tablespoons firmly packed dark Brown Sugar
- 2 to 3 sliced Red Chilis (optional for more heat)
- 2 (8-ounce) cans Sliced Bamboo Shoots, drained
- Rice
- Sweet basil (optional garnish)
Steak, Spinach & Feta Pinwheels

The marinade alone makes this recipe worth trying, but then you add in the stuffing and it really sings
- MARINADE:
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup red wine
- 1/4 cup Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon ground black pepper
- 1 1/2 pounds flank steak, butterfly (or pound) to 1/2 inch thickness
- FINAL PREPARATION:
- 1/2 teaspoon salt
- 2 cloves garlic, minced
- 1/4 cup onion, chopped
- 1/4 cup fine dry bread crumbs
- 1 cup frozen chopped spinach, thawed and squeezed dry
- 1/2 cup crumbled feta cheese (seasoned is ok for some extra pop)
Bacon Ranch Pull Apart Bread

Found this while looking for a version of what my son dreamed up
- 1 round loaf of sourdough (or similar) bread
- 1 cup cheddar cheese, shredded
- 6 slices Bacon, cooked and chopped
- 1/2 cup butter (1-stick), melted
- 1 heaping tablespoon ranch dressing mix (the dry stuff)
Creamy Chicken & Mushroom Pasta

This one pot dish comes together nicely and uses Evaporated Milk instead of Cream, but you'd never know
- 5 chicken thigh fillets, boneless, skinless
- 1 teaspoon dried basil
- Salt and pepper, to taste (seasoning for the chicken)
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 5 cloves garlic, minced
- 1/3 cup dry white wine
- 8 ounces brown or cremini mushrooms, sliced
- 2 (12-ounce) cans chicken broth
- 1 (12-ounce) can evaporated milk
- 1/3 cup milk
- 10 ounces uncooked pasta (Penne or something similar)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup parmesan cheese, grated
- Parsley, optional garnish
