- INGREDIENTS
- Canola oil cooking spray
- 1/2 cup whole-wheat flour
- 1/2 cup all-purpose flour
- 2 tablespoons cornmeal
- 1 teaspoon salt

- 1 1/2 pounds zucchini (about 3 medium), cut into 1/2-by-3-inch sticks

- 2 filet mignon steaks, at least 2" thick each
- 2 tablespoons unsalted butter, softened
- Coarse ground pepper, to taste
- 1/2 teaspoon garlic, minced, optional
- 2 slices muenster, swiss, havarti, or monterey jack cheese
- 1 sheet puff pastry, rolled out just a little bit
- 1 egg, beaten
- 1 tablespoon olive oil
Crock Pot Minestrone Soup

Rinse and drain beans. Puree beans with 1 cup of the broth in a blender
- 1/2 * 1/2 onion, chopped
- 1 * 1 cup carrots, chopped
- 1 * 1 celery stalk, chopped
- 2 * 2 garlic cloves, minced
- 1 * 1 (28 oz) can diced tomatoes
- 1 * 1 (15 oz) can white beans, drained, rinsed (cannellini or navy)
- 3 * 3 cups fat free chicken broth (or vegetable broth for vegetarians)
- 1 * 1 oz chunk of good Parmesan cheese rind
- 1 * 1 fresh rosemary sprig
- 2 * 2 bay leaves
- 2 * 2 tbsp chopped fresh basil
- 1/4 * 1/4 cup chopped fresh Italian parsley leaves
- * salt and fresh pepper
- 1 * 1 medium zucchini, chopped
- 2 * 2 cups chopped fresh or frozen (defrosted) spinach
- 2 * 2 cups cooked small pasta like ditalini or elbows (al dente)
- * extra parmesan cheese to top (extra pts)

In a small saucepan heat the sugar and 1 1/2 cups of water just until the sugar completely dissolves

- 1 1 can 1 (12-ounce) can club soda or seltzer water, chilled

- 1 1 1 lemon sliced into wheels
Broccoli and Orzo Casserole

Although this recipe calls for broccoli, other frozen vegetables can be substituted
- 1 package Green Giant Broccoli Steamers
- 2 cups Cooked Orzo (about 1 cup uncooked)
- 1 Yellow Onion (chopped)
- 3 Garlic cloves (chopped)
- Olive Oil
- Salt
- freshly cracked Black Pepper
- 2 tablespoons Flour
- 2 cups Chicken Stock
- 1/4 cup Milk
- 2 1/2 cups Parmesan Cheese (divided)
- 1/2 cup Panko Bread Crumbs
- 3 tablespoons melted Butter
- 1/2 teaspoon Paprika
- 1/4 teaspoon Cayenne
- 1/4 teaspoon Chili Powder
Slow Cooker Italian Tortellini Stew

1.In 4 to 6-quart slow cooker, combine all ingredients except basil and tortellini; mix well
- 1 small onion, finely chopped
- 2 medium zucchini, halved, cut into 1-inch slices
- 2 (14 1/2-oz.) cans ready-to-serve vegetable or chicken broth
- 1 (28-oz.) can crushed or diced tomatoes, undrained
- 1 (15.5-oz.) can great northern beans, drained, rinsed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon dried basil leaves
- 1 (8-oz.) pkg. uncooked dry cheese-filled tortellini

1. Drain and rinse the black eyed peas, black beans, and corn
- 1 can black eyed peas, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can shoepeg corn, drained and rinsed
- 4-5 Roma tomatoes, seeds removed and diced
- 2-3 diced avocados, ripe but still firm
- 4 green onions, sliced thin (I used 1/2 purple onion diced finely because that's all I had)
- around 1/2 to 3/4 cup Zesty Italian dressing
- 1/2 bunch cilantro, chopped finely
- 1-2 limes
- ground pepper and salt to taste

1. Lay the pork on a cutting board and season with salt and pepper
- 3 pounds Boneless Pork Shoulder or Leg (butterflied and pounded to yield 1 large piece 1/2-inch thick and 12 inches square)
- Kosher Salt and freshly ground Black Pepper
- 1/2 cup finely chopped Italian Parsley plus 2 tablespoons
- 1/4 cup Pine Nuts (baked for 8 minutes in a 400F oven) plus more to garnish
- 1/2 cup Dried Currants plus more to garnish
- 3/4 cup freshly grated young Pecorino Cheese
- 16 slices Prosciutto di Parma (about 1/2 pound)
- 4 Hard Boiled Eggs (peeled and quartered lengthwise)

- 3/4 cup orange marmalade
- 1 tablespoon honey (orange blossom if available)
- 1/2 teaspoon red chili flakes
- 1 teaspoon freshly grated ginger
- Salt and freshly ground black pepper, to taste
- 12 chicken drumsticks (about 3 pounds)
- 1/4 cup chopped cilantro, to garnish

- 1/4 1/4 1/4 c brown sugar, lightly packed
- 1/4 1/4 1/4 tsp salt
