- 3 cups yellow onions, chopped (2 onions)
- 1 tablespoon minced garlic (3 cloves)
- 4 cups chicken stock, preferably homemade
- 1 (28-ounce) can crushed tomatoes, preferably San Marzano
- Large pinch of saffron threads
- Kosher salt and freshly ground black pepper
- 1/2 cup orzo
- 1/2 cup heavy cream
- Grilled Cheese Croutons (see below)

In a large sauté pan, heat the cream, wine and stock over medium-high heat until it starts to bubble
- 2 cups heavy cream
- 1/2 cup dry white wine
- 1/2 cup chicken stock
- 4 oz. crumbly Gorgonzola cheese (about 1 cup)
- 2 Tbsp freshly grated Parmesan cheese
- Kosher salt and freshly ground black pepper to taste
- Grated nutmeg to taste
ISLAND PORK TENDERLOIN

Stir the spice rub ingredients together in a small bowl and rub all over the pork
- For spice rub:
- 2 tsp salt
- 1/2 tsp pepper
- 1 tsp cumin
- 1 tsp chili powder
