- 1 tsp coarse salt
- 1 garlic clove, minced
- 1/2 tsp white pepper
- 1/4 tsp dried thyme, crumbled
- pinch of ground allspice
- 1 pork tenderloin (12 oz)
- 2 tbsp vegetable oil
- 1/2 cup milk (do not use lowfat or nonfat)
- 1/4 cup brandy
TURKEY OR CHICKEN PORCINI RAGU

Place the dried mushrooms in a small pot and add the stock to cover

- 1 loosely packed cup (a fat handful) dried, sliced porcini mushrooms
- 2 cups turkey or chicken stock
- 1 package (1 pound or 500 grams) paccheri or rigatoni

- 1 fresh bay leaf
