- 2 2 2 oz. unsweetened chocolate
- 1/3 1/3 1/3 cup coconut oil -- or butter
- 1 1 1/4 8 sweeteners -- (12 packets Truvia, 1/4 cup xylitol, 8 drops liquid sucralose)
- 2 2 2 eggs
- 1/2 1/2 1/2 tsp. vanilla
- 1/2 1/2 1/2 cup almond meal
- 1/4 1/4 1/4 cup flaxseed meal, golden
- 1/2 1/2 1/2 tsp. baking powder
- 1/4 1/4 1/4 tsp. salt

- Chick-Fil-A Chicken Salad--
- 2 Cups Cooked Chicken Breast
- 1/3 Cup Finely Diced Celery
- 1 hard boiled egg, minced
- 1/4 teaspoon Salt
- 1/2 teaspoon Sugar
- 1/4 teaspoon Freshly Ground Pepper
- 1/3 Cup Sweet Pickle Relish
- 2/3 - 1 Cup Mayonnaise
- Texas Toast or Thick Cut Sandwich Bread
- Boil chicken until completely cooked. Remove from water and cool meat.
- You can save the chicken broth, seal and refrigerate no more than a week.
- After chicken is cool, cut into tiny pieces. Place in a mixing bowl with
- all other ingredients and mix well. Butter one side of sandwich bread and
- grill. Place salad in between grilled bread slices and serve.

- So sorry it was watery. I drained the squash really well
- and had no water in my baking dish. Did you slice it thin?
- We used a mandolin and I pressure cooked it and then
- cooled and drained it on paper towel. I don't think I said that
- on recipe for which I apologize.

- All I can say is that we love this dish and had it with BBQ ribs.
- Potatoes Scalloped LC
- Chayote
- Serves 4-6
- Melt butter in a 7”x11” Pyrex baking dish
- 2 large chayote squash peeled, seeded
- 1 oz. chopped onion or shallot (optional)
- Cream cheese
- Thin slices of Tillamook or other cheese
- 1 egg beaten
- 1/2 ½ c. LC milk
- 1/2 ½ c. Cream
- 2 rounded Tbs. CarbQuick
- Salt and Pepper
- Mandolin the squash or slice thin as for
- scalloped potatoes.
- Pressure cook for 2 min. Drain well on paper towels
- Layer ½ of the chayote in buttered pan
- Dot with cream cheese
- Layer with thin slices of cheese
- Salt and pepper layers
- Repeat.
- Beat egg with cream, milk, and CarbQuick
- Pour over all.
- Bake 350 for about 35-40 minutes. This should have
- a custard like appearance and be slightly puffed.

- Mock Girl Scouts Thin Mint Cookies
- 1/4 cup butter, softened
- 1 cup equivalent liquid splenda
- 1/4 c. Peppermint Paddy SF Davinci syrup
- 2 T. polyd (2 carbs)
- 2 T. powdered erythritol
- 1/3 packet sweet one
- 2 T. powdered whole eggs (1 carb)
- 1/4 cup almond flour (3 carbs)
- 1/2 c. wheat protein isolate 5000 (1 carbs)
- 1 oz. (1 square melted or pre-melted packet) unsweetened chocolate (4 carb)
- 1 t. pure peppermint extract
- In a small mixing bowl wisk almond flour, wheat protein isolate, powdered eggs, and polyd till well combined.
- In another small mixing bowl wisk butter, chocolate, liquid splenda, Davinci syrup, erythritol, sweet one, and extract till smooth.
- Stir the wet mixture into the dry till smooth
- Drop a teaspoon of batter on parchment or non-stick foil lined cookie sheet and flatten to 1/8 inch thick (batter is thin so this is quite easy)
- Bake in a 350 oven for 15 min
- No more guilt at GS cookie time
- makes 2 dozen total recipe is 11 carbs or 1/2 carb per cookie.

- 3 3 3 garlic cloves
- 2 2 2 fresh rosemary sprigs
- 2 2 2 fresh thyme sprigs
- 2 2 2 cans (14-1/2 ounces each) chicken broth
- 3 3 3 cups white wine or additional chicken broth
- 3 3 2-inch celery ribs, cut into 2-inch pieces

- Mock Graham Cracker Crust
- servings 8 @ 1 carb per serving, 1.5 for the chocolate version.
- 1/4 cup butter, softened
- 1/2 t. splenda quick pack (2 carb)
- 2 T. granular erythritol
- 1 egg (1 carb)
- 1/2 teaspoon vanilla
- 1/2 cup unblanched almond flour (2 carbs)
- 3 T. wheat protein isolate 5000 (1 carb)
- 1 T. resistant wheat starch (1 carb)
- 1 T. wheat bran (1 carb)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- In a medium bowl, mix together the butter, egg, Sweetzfree and vanilla till well combined.
- Combine dry ingredients and add to butter mixture; beat until combined and smooth.
- Scoop a tablespoon of dough and place on greased or parchment-lined baking sheet.
- Bake in a 350 degree oven for 15 – 20 minutes or until golden brown.
- Note: I made 6 cookies as equal as I could and browned them to be as crunchy as I could to help with the next step.
- 6 cookies makes about 1 3/4 c. of crumbs.
- In a small mixing bowl combined 1/4 c. of melted butter with the crumbs then press mixture firmly against bottom and side of pie plate.
- Bake in a 350 oven 10 to 12 min.then set aside to cool.
- To make a chocolate flavor crust add the following to the above recipe.
- 1 oz. (1 square)unsweetened bakers chocolate (finely grated)
- 1/8 t. splenda quick pack
- add these ingredients as is to the butter mixture above before combining with the dry ingredients.
- Chocolate Pudding Filling
- servings 8 @ 1.75 carb per serving
- 1/4 cup granular erythritol
- 1/4 cup unsweetened cocoa powder (4 carb)
- 2 T. not/Sugar
- pinch of salt
- 2 cups chocolate almond breeze (4 carb)
- 1 large egg (1 carb)
- 4 squares lindt 85% Cocoa (5 carb)(you could sub unsweetened chocolate for this + some sweetener for this but the carbs would be the same)
- 1 Whisk together the erythritol, cocoa powder, not/Sugar, and salt in a heavy 2-quart saucepan.
- 2 Gradually whisk in the Almond Breeze and egg.
- 3 Bring to a boil, whisking constantly, and boil, whisking, until pudding is thick, about 3 to 5 minutes.
- 4 Whisk in the Lindt chocolate until they are melted and the mixture is smooth.
- 5 Remove from heat.
- 6 Pour the pudding into the cooled pie shell.
- 7 Refrigerate, covered, until cold, at least 2 hours.
Tuna and macaroni Cassarole

- 8 ounces Dreamfield's pasta -- elbows
- 12 ounces tuna in water -- drained
- 1 can cream of mushroom soup
- 2 cups shredded cheddar cheese -- divided
- Cook macaroni in salted water until tender, about 12 minutes.
- Pour into colander; let stand until completely drained.
- Meanwhile, preheat oven to 350F.
- Return macaroni to saucepan.
- Stir in tuna, soup and 1 1/2 cups of cheese.
- Turn into a 9" square pan.
- Sprinkle with remaining cheese.
- Bake for 20 minutes, or until cheese topping is starting to brown
- and casserole is hot and bubbly
