New Mexican Enchilada Cassarole

- 18 medium corn tortillas
- 2 lbs shredded monterey jack cheese or 2 lbs colby-monterey jack cheese
- 2 (15 ounce) cans diced tomatoes
- 3 (10 3/4 ounce) cans cream of mushroom soup
- 8 ounces diced or chopped green chili peppers
- 1 cup minced onion
- 2 lbs very lean hamburger
- 1 clove garlic, crushed
- 1/2 teaspoon oregano
- salt
- Change Measurements: US | Metric
- Directions:
- Prep Time: 15 mins
- Total Time: 1 1/4 hr
- 1 Brown hamburger seasoning with garlic, oregano and salt.
- 2 Drain and blot any grease.
- 3 Stir together until smooth: Mushroom soup, tomatoes, and green chili.
- 4 For a large dinner: Spray baking dish 10 X 15, with Pam.
- 5 Make layers of: 6 tortillas, 1/3 of each: soup mix, onion, meat, and cheese.
- 6 Repeat until all is in Baking dish.
- 7 For a small dinner: Spray 2 8x8 baking dishes with Pam.
- 8 Break or cut 6 tortillas in half.
- 9 Make layers of: 2 whole and 2 halves of tortillas, 1/6 of each: soup mix, onion, meat, and cheese.
- 10 Repeat until all is in baking dishes.
- 11 Wrap 1 dish tightly in aluminum foil, label, and freeze for next week.
- 12 Bake in 350F oven for 1 hour.
- 13 Serves 6 very hungry teens or 10 to 12 adults

Hot Pumkin Cereal

- then in a bowl I mixed:
- LC Hot Pumpkin Cereal!
- ok so I kinda just tweeked another recepie on here to make this.. BUT for all my fellow pumpkin lovers, this stuff is AMAZING (to me and family anyway lol)
- its a cross between cream of wheat, and cottage cheese in consistency..
- ok this is how I made it..
- in a small soup pot (think like the size that holds one can of soup)
- I put a tablespoon of coconut oil and butter. (you could use just butter I use both for the health benefits)
- 1T heavy whipping cream
- 2 HEAPING TABLESPOONS of canned pumpkin (not pumpkin pie mix)
- couple of sprinkles of nutmeg and cinnamon
- dribble of vanilla extract.
- you could either now add sugar free syrup (caramel, vanilla, and cinnamon dolce are very good) or splenda or stevia to make it a little sweeter..
- then after thats all wisked together wisk in :
- 2 eggs
- I wisked that very well together untill it looked like pumpkin pie filling raw..
- then heated up the pot untill butter was melted.
- I think the wisk is a huge key to this becuase it covers so much area in the small pot, and when wisking fast you get just the right texture, Vs using a fork or a spatula..
- Its about done when it looks like very thick cottage cheese and it starts to stick to itself..
- I then poured this in a bowl, topped it with another sprinkle of nutmeg and cinnamon, 2 T heavy whipping cream, and a little squirt of sugar free maple syrup...
- ENJOY! this is amazing imo..
- Very Very Very filling!
- this will be great on cold snowey days

- an adaptation of a Cinnamon Roll recipe that Barbo sent me - it may well have originated on this forum, not sure to whom to credit it! Anyway I doubled and tweaked and came up with this one:
- Cherry Danish
- Cherry Danish
- Dry ingredients
- 1 1 1 cup almond flour
- 1 1 1 tablespoon plus 1 teaspoon vital wheat gluten
- 1/2 1/2 1/2 cup oat fiber
- 2/3 2/3 2/3 cup Designer Whey plain or vanilla protein powder
- 2 2 2 teaspoons baking powder
- 1/2 1/2 1/2 teaspoon xanthan gum
- 1/2 1/2 1 teaspoon glucomannan powder (or just use 1 tsp. xanthan gum total and delete glu powder)
- 1/4 1/4 0 tsp. NuNaturals NuStevia 0 Carb stevia powder
- 1/4 1/4 1/4 cup Diabetisweet brown sugar substitute
- 1 1 3 cup shredded mozzarella cheese (I actually use Trader Joe's 3 cheese blend)
- Wet Ingredients
- 4 4 4 eggs
- 1/4 1/4 2 cup plus 2 tablespoons light oil - I use rice bran oil or grapeseed oil
- 1/4 1/4 1/4 cup sugarfree Torani or DaVinci vanilla syrup
- 1 1 1 teaspoon vanilla extract
- 1/4 1/4 1/4 cup water
- Topping
- 1 1 1 can no sugar added cherry pie filling
- Icing
- 4 4 4 oz. softened cream cheese
- to to taste
- 1/2 1/2 1/2 teaspoon vanilla extract
- to to cream to thin to a squeezable consistency
- Directions:
- to 350*. 12 350*. Spray or grease 12 muffin top pan wells.
- Stir all dry ingredients except cheese together in a medium bowl; once well-combined, stir in the cheese.
- 350* 15 350* for about 15 minutes, til the batter is set and turning golden brown.
- 10 to to the pan 10 minutes, then carefully remove to a rack to finish cooling. I find a plastic spatula helps get them out of the pans - loosen around the edges first, then run spatula gently under the Danish.
catalina Dressing

- CATALINA DRESSING:
- 3 Tbsp. low-carb ketchup such as Carb Options
- 1/4 c. white vinegar
- 1 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 2 Tbsp. Splenda, or liquid artificial sweetener to taste
- 1/2 c. vegetable oil (I used extra light olive oil)
- 1/4 tsp each dry mustard and chili powder
- Stir together all ingredients and let stand for 15 minutes. Or you can whiz it up in the blender.

- Ingredients
- 2 medium avocados, peeled and seeded 1/2 can Ro-Tel tomatoes 1 (3 ounce) packages cream cheese, softened 1 teaspoon garlic salt Directions
- Mix all ingredients together and serve immediately with restaurant style tortilla chips.
- NOTE: If not eating right away, place seeds in dip to help guacamole from turning brown.
- Also, place a piece of plastic wrap across the top of the guacamole, mashing it in to touch the top layer of guacamole.
- When you peel the plastic wrap off, it will take away anything that has turned a little brown

- Makes a nice New Years Eve snack
- Bumping this great crispy very LC cheesy snack.
- I used the following tweak this time and used a 3 1/2 inch muffin top pan.
- It made 12 snacks total 4 carbs.
- 1/2 cup shredded 5 cheese mexican blend
- 1/2 + 1/8 cup Kraft grateded parmesan
- 1/4 cup pecans
- 1 T fresh thyme leaves
- I put all ingredients in a mini prep food processer and pulsed about 5 times.
- I then spooned on a muffin top pan and baked in a preheated 400 degree oven for 6 to 8 min until golden brown and crispy.
- YUMMO!!!
Low Carb Sweetened Condensed Milk

- 1 1 1 can of table cream
- 2/3 2/3 1 2 sweetener (I used 1 Tbls erythritol and 2 drops Ez-Sweetz)
- 2 2 2 Tbls zero-carb vanilla whey pp (in place of plain pp and vanilla extract)
- 1/8 1/8 1/8 tsp glucomannan powder (to thicken)

- Irish cream
- 2 cups whiskey
- 3 cups cream
- 1/2 cup strong coffee
- 1 splenda quik pack ( or 1 cup of sweetener)
- 1 Tablespoon vanilla
- 2 teaspoons chocolate syrup
- Mix everything to gether in a large bowl with a stick blender. Pour into a good bottle with seal.
Olive Garden Clone for Italian Dressing

- make this one all the time and just replace the corn syrup with Splenda or Truvia or whatever I have on hand and the veg oil with coconut or olive oil:
- Olive Garden Salad Dressing
- 1/2 cup mayonnaise
- 1/3 cup white vinegar
- 1 teaspoon vegetable oil
- 2 tablespoons corn syrup
- 2 tablespoons parmesan cheese
- 2 tablespoons romano cheese
- 1/4 teaspoon garlic salt
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon parsley flakes
- 1 tablespoon lemon juice
- Directions:
- Mix all ingredients in a blender until well mixed.
- If this is a little to tart for your own personal tastes please add a little extra sugar.
- Olive Garden Salad:
- lettuce, pepperoncinis, tomatoes, black olives, croutons, red onion and shredded parmigiana cheese.
- ETA: this looks almost identical to the one posted above!

- 4 4 4 large green New Mexican chiles, roasted and peeled, stems on
- Cheddar cheese or Monterey Jack, cut in sticks
- 3 3 3 eggs, separated
- 1 1 1 Tb water
- 3 3 3 Tbs flour
- 1/4 1/4 1/4 tsp salt
- flour
- 2 to 3 in the mixture and fry in 2 to 3 inches of oil until they are a golden brown.
