Lemon Pie

  • Easy Lemon Pie
  • --------------------------------------------------------------------------------
  • ...this is a variation of CarolynF's Easy Strawberry Pie recipe. Careful, y'all, this is dangerously good.
  • Easy Lemon Pie
  • 9 inch pie pan
  • 1 small Cook N Serve Sugar Free vanilla pudding
  • 1 small Sugar Free Lemon Jell-O
  • 3/4 cups of water
  • 3/4 cups half & half
  • 6 oz cream cheese
  • *1/2 tsp lemon extract
  • In a saucepan: mix pudding, jello, water, half & half well, with a whisk; bring to boil. Remove from heat, add cream cheese and whisk together while it melts. Pour into pie pan and refrigerate until set.
  • *I added this in at the last step; because I like REALLY lemony flavor and I thought the cream cheese might dilute the jello flavoring somewhat. Depending on your affinity for tang, you could take it or leave it.
  • Refreshingly lemony, slices like pie, satisfyingly yummy. This is going on the list of summer favorites with the strawberry pie! Thanks for the original, Carolyn.
  • I made a crust for this with almond meal, 4 packets of splenda, and butter; then brought it to the office to make sure I didn't eat it all. The non-lowcarbers just about have it finished off for me
