Brisket (Lisa's recipe)

Preheat the oven to 350 degrees F
- 4 slices of bacon, chopped
- 1 (2-pound) beef brisket
- Essence, recipe follows
- 2 large onions, sliced thinly
- 4 cloves garlic, smashed
- 2 tablespoons tomato paste
- 1 (12-ounce) bottle beer (not dark)
- 1 cup beef broth
- 2 carrots, cut crosswise into 1 1/2-inch-thick pieces
- 1 boiling potato, cut into 1-inch pieces
- 1 turnip, cut into 1-inch pieces
- Cooked buttered noodles, as accompaniment
- 1/2 cup minced fresh parsley leaves

butter 9x13 pan. line bottom with whole graham crackers
- 1 box graham crackers
- 3 1/2 cups milk
- 2 vanilla instant pudding (large box)
- 12 oz cool whip
Carrot Cake

Combine dry ingredients in a large mixing bowl
- 2 cups sugar
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups grated carrots
- 1 1/3 vegetable oil
- 2 eggs, beaten
- 1 cup chopped pecans (I used a cup of raisins on your half)
- 1 cup drained crushed pineapple
- 2 teaspoons vanilla extract
- 1/2 teaspoon lemon extract
- 1/2 teaspoon almond extract
Caramel Apple Bread Pudding

•In a large bowl, combine the applesauce, milk, brown sugar, egg substitute, vanilla and cinnamon
- 1 cup unsweetened applesauce
- 1 cup fat-free milk
- 1/2 cup packed brown sugar
- 1/2 cup egg substitute
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 5 cups cubed day-old bread
- 1/2 cup chopped peeled apple
- 1/2 cup fat-free whipped topping
- 1/2 cup fat-free caramel ice cream topping
Sandy's Eggplant Patties

Bring a medium pot of water to a boil
- 1 medium eggplant (about 11/2 lbs.), ends removed, peeled and cubed
- 13/4 Cups round butter crackers (about 48), crushed, divided
- 11/4 Cups shredded sharp cheddar cheese
- 1 egg, lightly beaten
- 2 TB. fresh parsley (or 2 tsp. PARSLEY FLAKES)
- 2 TB. sliced green onion
- 1 garlic clove, minced (or 1/4 tsp. PENZEYS MINCED GARLIC)
- 1/2 tsp. KOSHER-STYLE FLAKE SALT
- 1/4 tsp. PENZEYS FRESHLY GROUND PEPPER
- 1/2 Cup vegetable oil
