1. Preheat oven to 350 degrees F (175 degrees C)
- 1 pound lean ground beef
- 8 ounces macaroni
- 1 (10.75 ounce) can condensed tomato soup
- 1 (14.5 ounce) can diced tomatoes or a can of thick salsa
- 1/2 can of black beans
- 1 (1.25 ounce) package taco seasoning mix
- 2 ounces shredded Cheddar cheese
- 2 ounces shredded Monterey Jack cheese
- 1 cup crushed tortilla chips
- 1/2 cup sour cream (optional)
- 1/4 cup chopped green onions
Layered Mexican Chicken

- 1 spray olive oil cooking spray
- 2 pound(s) uncooked boneless, skinless chicken breast
- 30 oz canned black beans, rinsed and drained
- 3 cup(s) fat-free sour cream
- 2 cup(s) shredded reduced-fat Monterey Jack cheese, or Mexican-style cheese blend
- 8 oz chopped green chilies, two 4-oz cans
- 2 tsp Cumin seeds
- 1/2 tsp black pepper
- 12 medium corn tortilla(s), cut into 2-inch strips
- 1 cup salsa, mild, medium or hot

- 1 (16 ounce) can refried beans
- 3/4 onion, diced
- 5 (10 inch) flour tortillas
- 1 cup salsa
- 2 cups shredded Cheddar or Colby Jack cheese
- 1 package of taco-seasoning
- 3/4 pound of ground beef
Slow Cooker Pork Roast

This recipe is a favorite with my husband
- 1 large onion, sliced
- 2 1/2 pounds boneless pork loin roast
- 1 cup hot water
- 1/4 cup white sugar
- 3 tablespoons red wine vinegar
- 2 tablespoons soy sauce
- 1 tablespoon ketchup
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 dash hot pepper sauce, or to taste
Pinwheel Cookies

1.Sift the flour, baking powder, baking soda, and salt together into a bowl
- 4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 1/3 cups butter
- 1 cup packed brown sugar
- 2/3 cup white sugar
- 2 eggs, beaten
- 1 1/2 teaspoons vanilla extract
- 1 drop red food coloring, or as needed
- 1 drop green food coloring, or as needed
Southwestern Casserole

1. Cook macaroni according to package directions
- 1 (7 ounce) package elbow macaroni
- 2 pounds ground beef
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 (14.5 ounce) cans diced tomatoes, undrained
- 1 (16 ounce) can kidney beans, rinsed and drained
- 1 (6 ounce) can tomato paste
- 1 (4 ounce) can chopped green chilies, drained
- 1 1/2 teaspoons salt
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pepper
- 2 cups shredded Monterey Jack cheese
- 2 jalapeno peppers, seeded and chopped*

- 1 stalk celery, finely chopped
- 1 tablespoon chopped fresh sage leaves (optional)
- 2 (32 ounce) cartons Progresso® chicken broth
- 1 bay leaf
- 2 cups green beans, cut into 1 inch pieces
- 1 sweet potato, diced
- 1/2 cup uncooked small pasta, such as orzo or pastina
- 3 cups diced cooked dark turkey meat
