Zucchini Oven Chips

Breaded and baked zucchini slices
- 1/4 c. Italian dry bread crumbs
- 1/4 c. grated fresh Parmesan cheese
- 1/4 tsp. seasoned salt
- 1/4 tsp. garlic powder
- 1/8 tsp. freshly ground black pepper
- 2 tbl. fat-free milk
- 2 1/2 c. (1/4 inch thick) slices zucchini (about 2 small)
- Cooking spray
Fajitas

Mix together the marinade ingredients (lime thru salt)
- 2 limes, juiced
- 3 T. canola oil
- 2 garlic cloves, chopped
- 1 jalapeno pepper, chopped
- 1 T. fresh cilantro, chopped
- 1 t. ground cumin
- 1 t. salt
- 1/2 lb. sirloin steak or chicken breast, or a combination of the two
- 1 med. onion, sliced
- 1 sm. green bell pepper, sliced into strips
- 1 sm. red bell pepper, sliced into strips
- 6 fajita-sized tortillas
Stuffed Peppers

Cut peppers in half, remove seeds and membranes and parboil for 5 minutes; drain
- 2 lg. bell peppers, any color
- 1/2 lb. ground beef
- 1/4 c. uncooked rice
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- 1 clove garlic, chopped
- 1 can diced tomatoes
- 1 8 oz. can tomato sauce
- 1 tsp. sugar
- dried oregano and basil to taste
- salt and pepper to taste

- 1 clove garlic, minced
- 1 medium onion, chopped
- 2 tbl. olive oil
- 1 lb. ground beef
- 1 can (10.75 oz.) condensed tomato soup
- 2 cans (6 oz. each) tomato paste
- 1 1/2 c. brewed coffee
- 1/2 tsp. sugar
- salt to taste
- 1/2 c. wheat germ (optional)
- 1 can (3 oz.) sliced mushrooms
- 1/4 tsp basil or oregano
- hot cooked pasta

Southwest Chicken Soup

Quick southwest flavored chicken soup
- 2 tbl. olive oil
- 8 oz. cubed chicken breast
- 1/4 c. chopped onion
- 2 garlic cloves, chopped
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/2 tsp. chili powder
- 1/8 tsp. red pepper
- 2 c. chicken broth
- 1 small can corn
- 1 can black beans, rinsed
- 1 14 oz. can Mexican stewed tomatoes
- 3 6" tortillas (or use chips instead)
- 2 tbl. chopped fresh cilantro
Lasagne

Lasagne
- Sauce:
- 1 med. onion, chopped
- 2 garlic cloves, minced
- 2 tbl. olive oil
- 1 lb. lean (7% fat) ground beef
- 2 14 oz. cans Italian tomatoes
- 1 can tomato paste
- 1 c. water
- 1/2 c. wheat germ (optional)
- salt to taste
- 1/4 tsp. cayenne pepper
- 1 tsp. sugar
- 1 tsp. dried basil
- 2 bay leaves
- Lasagne:
- 8 oz. lasagne noodles
- 1 lb. ricotta cheese
- 8 oz. whole mozzarella cheese
- 1/2 c. grated Parmesan cheese
- Lighten it up:
- Replace the ground beef with Jenny-O Hot Italian Turkey Sausage; don't add spices (including onion and garlic) until you taste the cooked turkey. Then add as needed. Use part-skim ricotta and part-skim mozzarella.

- 2 tbl. olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1/4 c. chopped fresh parsley
- 1 1/2 tsp. salt
- 1/4 tsp. saffron or curry powder
- 1/4 tsp. pepper
- 1 bay leaf
- 4 c. water or vegetable broth
- 1 tsp. lemon juice
- 1 lb. fish fillets, cut into 2 inch pieces
- 1 12 oz. package frozen uncooked shrimp
- 1 6 oz. package (3/4 c.) frozen uncooked crab or lobster meat
- 1 pint fresh oysters or clams, undrained
- 1 8 oz. can tomatoes
- julienned carrots
- chopped leek
- fresh green beans
- pinch cayenne pepper
