Southern Sausage Cream Gravy

- 3 cups cool milk

Prepare 3 8-inch cake pans or 2 9-inch pans
- 4 oz. bittersweet chocolate, finely chopped
- 1/2 cup sour cream
- 1 cup firmly packed light brown sugar
- 2 cups all-purpose flour
- A good pinch of salt
- 3 tablespoons unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 stick unsalted butter, at room temperature
- 1 cup sugar
- 2 very large eggs, separated

Balsamic-Roasted Brussels Sprouts

- 1/2 C milk
- 2 t plus 2 T unsalted butter
- 8 large eggs
- 1 C plus 2 t sugar
- 1 C all purpose flour
- 1 t baking powder
- 1/8 t salt
- 1 t vanilla
Tortellini and Spinach in Garlic Broth

Don't be tempted to cook the tortellini in the soup; they will soak up too much of that irresistibly garlicky broth
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 3 cups water
- 3 cups canned low-sodium chicken broth or homemade stock
- 1 1/2 teaspoons salt
- 1 pound fresh or frozen cheese tortellini
- 1 pound spinach, stems removed, leaves washed well (about 2 1/4 quarts)
- Grated Parmesan, for sprinkling

- 1/4 cup crumbled Cabrales blue cheese
- 2 teaspoons finely chopped fresh thyme
- Salt and freshly cracked black pepper
- 4 (1 1/2-inch thick) filet mignons
- Canola oil, as needed
- 1 teaspoon coarsely cracked black pepper
