TUSCAN CHICKEN SKILLET

Season the chicken with salt and pepper
- 1 pound chicken breast tenderloins
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons olive oil, divided
- 12 ounces brown mushrooms, sliced
- 1/2 cup diced yellow onion
- 3 cloves garlic, minced
- 2/3 c. sun-dried tomatoes, chopped
- 1 teaspoon oregano
- 1/2 teaspoon thyme
- 1 (14.5 oz) can Cannelini Beans, drained and rinsed
- 2 (14.5 oz) cans fire roasted diced tomatoes
- 1 tablespoon sugar
- Salt and pepper, to taste
- Parsley for garnish
Sweet Onion Carbonara

Heat the oil in a heavy large frying pan set over medium heat
- 2 teaspoons olive oil
- 4 ounces thinly sliced pancetta, chopped
- 1 large or 2 small yellow onions, halved and thinly sliced
- 2 cloves garlic, minced
- 3/4 teaspoon kosher salt, plus more
- 3/4 cup shredded gruyere
- 2/3 cup whipping cream
- 1/2 cup freshly grated Parmesan
- 1/2 teaspoon grated lemon zest (1/2 lemon)
- 4 large eggs
- 1 pound mezzi rigatoni
- Fresh coarsely ground black pepper
- 2 tablespoons chopped chives
Old-Fashioned Gingerbread

Preheat the oven to 350 degrees F
- 1/4 cup dark rum or water
- 1/2 cup golden raisins
- 1/4 pound (1 stick) unsalted butter
- 1 cup unsulphured molasses
- 1 cup (8 ounces) sour cream
- 1 1/2 teaspoons grated orange zest
- 2 1/3 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon kosher salt
- 1/3 cup minced dried crystallized ginger (not in syrup)
- 1 cup confectioners' sugar, optional
- 2 tablespoons plus 1 teaspoon freshly squeezed orange juice
Pumpkin Bars

Mix together and beat 2 mins on medium

- 1 cup flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 / 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 / 4 cloves
- 1/2 cup oil
- 2 eggs
- 1/2 can pumpkin (half of 150z.)
- Frosting
- 2 cups powdered sugar
- 1/3 cup marga rine-soft
- 1 30z pkg cream cheese-soft
- 1 tsp vanilla
- 1 TBSP milk or j ust enough to cream icing.
Pot Roast Anne Burrell

Preheat the oven 350 degrees F
- Extra-virgin olive oil
- One 3-pound chuck roast, tied
- Kosher salt
- 3 ribs celery, thinly sliced on the bias
- 2 onions, thinly sliced
- 1 pinch crushed red pepper
- 3 cloves garlic, smashed and finely chopped
- 1/2 cup tomato paste
- 1/2 cup red wine vinegar
- 4 cups chicken stock
- 3 bay leaves
- 2 strips orange zest (removed from the orange with a vegetable peeler)
- 2 star anise
- 1 fresh thyme bundle
- 2 cups 1/2-inch diced butternut squash
- 1 1/2 cups 1/2-inch diced Jerusalem artichokes
- 6 to 8 dried figs, stems removed and quartered
TOMATO, CUCUMBER, AVOCADO SALAD

Chop tomatoes into a medium dice
- 1 1/2 cups of chopped tomatoes – I used cherry tomatoes
- 1 cucumber – peeled and seeded then diced
- 1 avocado – diced
- 4 oz feta cheese – cubed
- 2 tbs minced red onion
- 1 handful parsley – minced – about 2 tbs
- 2 tbs olive oil
- 1 tbs red wine vinegar
- 8 twists of black pepper from a pepper mill

- 2 pkgs 12 oz frozen hash browns
- 2 C sour cream
- 1 stick butter melted
- 1 t salt
- 1/4 t pepper
- 1 can cream of chicken soup
- 1 T minced onion
- 2 C shredded Cheddar Cheese
- 2 C crushed corn flakes
- 1/4 C melted butter
