Lucy's Company Ham, Cheese and Eggs

Preheat oven to 350 Remove crust from bread and cut slices in half
- 14 slices white sandwich bread
- 1 lb chopped cooked ham
- 1 C grated sharp cheddar cheese
- 1 C grated monterey Jack Cheese
- 2 3 oz cans chopped green chillies
- 7 eggs
- 1/2 t dry mustard
- 1 t salt
- 3 C milk
- 1 C crushed cornflakes or enough to cover
- 1/4 C melted butter
Prosciutto, Pear and Blue Cheese Sandwiches

1. Preheat broiler. 2. Arrange bread in a single layer on a baking sheet; broil 3 minutes or un til toasted
- 8 slices 100%"multigrain bread
- 1 tablespoon butter, softened
- 3 cups arugula
- 1 medium shallot, thinly sliced
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons red wine vinegar
- 118 teaspoon freshly ground black
- pepper
- 2 ounces thinly sliced prosciutto
- 1 ripe pear. cored and thinly sliced
- 2 ounces blue cheese, sliced
Mississippi Roast

Place roast on a cutting board and rub the salt and pepper all over it
- 1 boneless chuck roast or top or bottom round roast, 3 to 4 pounds
- 2 teaspoons kosher salt, plus more to taste
- 1 1/2 teaspoons freshly ground black pepper, plus more to taste
- 1/4 cup all-purpose flour
- 3 tablespoons neutral oil, like canola
- 4 tablespoons unsalted butter
- 8 to 12 pepperoncini
- 2 tablespoons mayonnaise
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon dried dill
- 1/4 teaspoon sweet paprika
- 1 teaspoon buttermilk, optional

Lemon Chess Pie

In a large bowl combine the sugar, flour and cornmeal
- 2 cups sugar
- 1 tablespoon flour
- 1 tablespoon fine yellow cornmeal
- 4 eggs
- 1/4 cup milk
- 1/4 cup unsalted butter, melted
- 2 tablespoons grated lemon rind
- 1/3 cup fresh lemon juice with pulp
- 1 (9-inch) unbaked pie shell
- 1 cup heavy cream, whipped

- 8 fig leaves
- 1 to 2 bunches green grapes
- 1/2 round of Brie, such a Tremblaye
- Wedge of aged sharp Cheddar
- 8 ounces goat cheese, at room temperature
- Fresh thyme sprigs
- Good olive oil
- 1 wedge blue cheese, such as Roquefort
- Dried apricots
- Fresh figs
- 1 package of dried fruit crackers, such as Rustic Bakery

Pork Chops With Plums and Chinese Spices

Preheat the oven to 375°F
- 1 lb. plums, red fleshed or golden fleshed are lovely
- 4 servings of bone-in pork chops or boneless pork sirloin
- 5 tbsp. honey
- 1 tsp. Chinese five spice powder
- 1 tsp. ground ginger
- 1 medium fresh red hot chile (I used Anaheim chile), seeded and finely chopped
- 4 cloves garlic, crushed
- Juice of 1/2 orange (I used 1/2 c. orange juice)
- 1 tsp. white wine vinegar
- Kosher salt and black pepper

- 1-1/2 cup sugar
- 3 tablespoons water
- 2-2/3 cups half and half
- 3/4 tablespoon instant coffee powder
- 3 egg yolks

- 1/2 teaspoon cardamom extract

Preheat the oven to 400°F and position an oven rack in the lower third
- 1 recipe Flaky Pie or Tart Dough, prepared through Step 4
- 1 1/2 tablespoons olive oil, plus
- 1 tablespoon for drizzling
- 1 large onion (12 ounces), thinly sliced
- 1/2 teaspoon finely chopped fresh thyme or rosemary
- 1/4 teaspoon plus 1 pinch kosher salt
- Black pepper
- 4 ounces Gruyère cheese, coarsely grated
- 1 pound red potatoes, washed (left unpeeled) and cut into 1/4-inch-thick slices
