GYOB Griddle Burger with DijOli

Put the beef chunks on a baking sheet in a single layer, leaving 1/2 inch of space around each chunk
- DijOli:
- 2 pounds English-cut short ribs, boned and meat cut into 1-inch chunks
- Kosher salt and freshly ground black pepper
- 12 slices white American cheese
- Unsalted butter, at room temperature, for buttering the buns
- 6 fresh pretzel buns, split
- Sliced pickled jalapenos, for topping
- DijOli, recipe follows
- 1/2 cup mayonnaise
- 1/2 cup Dijon mustard
- 2 tablespoons stone-ground mustard
- 1 tablespoon honey
- 1/2 clove garlic, grated on a rasp grater
- Kosher salt and freshly ground black pepper
Curry Powder

mix all ingredients in a spice grinder and grind until all large lumps have been removed
- 1 T ground cumin
- 1 T ground tumeric
- 1 T ground coriander
- 1 T ground Cayenne pepper
- 1 T ground fennel seeds (use spice grinder)
- 1 T ground cinnamon
- 1 T ground cardmon
- 1/2 t ground cloves
- 1/4 t ground black pepper
- 1/4 to 1/2 t dry mustard
- 1/2 t chili powder
- 1/4 t dry ginger
Bucatini with Shrimp and Spicy Cherry Tomato Pan Sauce

Bring a large pot of generously salted water to boiling
- 3/4 pound Bucatini or other fat spaghetti noodle
- 2 tablespoons extra-virgin olive oil
- 2 tablespoon cloves garlic, minced
- 2 pints red and/or yellow cherry tomatoes, halved
- 3/4 pound wild Patagonia or Gulf shrimp, peeled and deveined
- Generous pinch pinch crushed red pepper
- 6 ounces aged feta cheese, broken in pieces
- 1 handful basil, thinly sliced (about 1 cup sliced)

Preheat the oven to 375 degrees F
- Eight 3/4-inch-thick slices heirloom tomato
- 1 teaspoon fleur de sel sea salt, plus more for seasoning
- 1 teaspoon freshly ground black pepper, plus more for seasoning
- 2 tablespoons red wine vinegar
- 2 tablespoons extra-virgin olive oil
- 12 slices Applewood smoked bacon, cut 1/4-inch thick from slab bacon
- 1/2 cup julienne strips red onion
- 2 tablespoons mayonnaise
- Four 1/2-inch-thick slices country bread, toasted
- 1 avocado, cut into 1/4-inch-thick slices
- 2 cups butter lettuce leaves

Roasted Potatoes with Fancy Butter

Preheat the oven to 425 degrees F
- 4 pounds tri-color potatoes, such as fingerling, red thumb and baby purple, halved lengthwise
- 1/3 cup olive oil
- Kosher salt and freshly ground black pepper
- 1/2 cup dried porcini mushrooms
- 2 sticks unsalted butter, at room temperature
- 1 tablespoon fresh flat-leaf parsley leaves, chopped
- 1 tablespoon fresh thyme leaves
- Zest and juice of 1/2 lemon
