Red Beans and Rice

Red beans and rice has been a Monday meal tradition for decades in New Orleans
- 2 cups uncooked basmati brown rice
- 13 ounces turkey kiebalsa (or chicken andouille)
- 1 tablespoon canola oil
- 1 large onion, finely chopped (about 1 1/4 cup)
- 1 large green pepper, finely chopped (about 1 cup)
- 3 large celery stalks, finely chopped (about 1 cup)
- 4 garlic cloves, minced
- 1 teaspoon Cajun or Creole seasoning
- 1 teaspoon smoked paprika
- 1/4 teaspoon salt
- 2 (15 ounces) cans red beans, drained and rinsed
- 2 1/2 cups water
- Your favorite hot sauce
Ham and Split Pea Soup

This recipe convinced me that split pea soup was good enough to eat
- 1 pound dried split peas
- 1 ham hock
- 3 tablespoons unsalted butter
- 1 cup finely chopped yellow onions
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped carrots
- 2 teaspoons minced garlic
- 1 pound Smithfield ham, chopped
- 1 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper
- 8 cups water
- 1 bay leaf
- 2 teaspoons fresh thyme
Crock Pot Chicken Tortilla Soup

- 1 large boneless, skinless chicken breast
- 1 cup canned or frozen corn (drained if from a can)
- 1 can cream corn
- 1 cup diced bell pepper
- 1/2 onion, diced
- 1 10 oz can Original Rotel
- 4 cups low-sodium chicken broth
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne

- 1 cup buttermilk
- 2 cups self-rising flour
- 1 tbsp. kosher salt
- 2 tsp. freshly ground black
- pepper
- 1 tsp. poultry seasoning

Mudah's Peach Cobbler

This dessert is not for those like me who have to watch their intake of sugar
- Cobbler:
- 2 cups flour
- 1 teaspoon salt
- 3/4 cup Crisco Shortening
- 1/3 cup ice water
- For The Filling:
- 1 stick unsalted butter
- 3 pounds frozen peaches
- 4 cups sugar
- 4 tablespoons flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- 12 scoops vanilla ice cream

- extra virgin olive oil, 1 bottle
- balsamic vinegar, 1 bottle

Best darn ham sandwiches ever

Whether it be for a party, family get together, picnic, etc
- 2-12 packages sweet hawaiian rolls (the small dinner roll looking ones)
- 1 1/2 lbs Virginia ham (not honey ham)
- 12 slices swiss cheese
- 1 stick real butter
- 2 Teaspoons Worcestershire sauce
- 1 Teaspoon garlic powder
- 1 Teaspoon onion powder
Slow Cooker Bean & Bacon Soup

Fry bacon until crisp. (I did mine in the microwave)
- 4 slices bacon
- 2-3 large carrots, peeled & chopped
- 2 stalks celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- salt & pepper to taste
- 1 bay leaf
- 3 cans white beans (such as Great Northern), drained & rinsed
- 4 cups chicken broth
- 1 T. dried parsley
