Umbrian Vegetable Soup (Zuppa di Verdure all’Agliata)

Unlike in a classic minestrone, the vegetables in this dish are cooked quickly to preserve their bright flavor
- 1/2 cup packed basil leaves
- 1/4 cup extra-virgin olive oil,
- plus more for drizzling
- 2 tbsp. minced fresh flat-leaf parsley
- 4 cloves garlic
- 1/2 medium onion, cut into chunks
- 8 oz. red new potatoes, cut into 1⁄2" cubes
- 3 stalks celery, minced
- 2 medium carrots, minced
- 2 plum tomatoes, cored and minced
- Kosher salt, to taste
- 3 oz. spinach, trimmed and rinsed (about 2 loosely packed cups)
- 1 1/2 cups canned cannellini beans, rinsed
- 1 cup fresh or frozen green peas
- 1/2 small head frisée (endive), leaves cut into bite-size pieces (about 2 cups)
- Freshly ground black pepper, to taste
- Freshly grated Grana Padano or Parmesan, for serving

- 1 pound ground beef or bulk Italian sausage
- 1 medium onion; chopped
- 2 28-oz cans diced tomatoes; undrained
- 2 6-oz cans tomato paste
- 1 bay leaf
- 1 tablespoon Brown sugar
- 1 tbsp Worcestershire Sauce
- 1 tsp Louisiana hot sauce
- 6 garlic Cloves
- 1 teaspoon dried basil; (up to 2 teaspoons)
- 1 teaspoon dried oregano; (up to 2 teaspoons)
- 1 teaspoon Salt
- 1/2 teaspoon dried thyme; (up to 1 teaspoon)
- spaghetti; cooked, hot

Spicy French Dressing

Combine all ingredients except oil in container of electric blender
- 1/2 cup sugar
- 1/2 cup catsup, plus 2 tablespoons
- 1/4 cup vinegar
- 2 teaspoons lime juice
- 3/4 teaspoon onion, juice
- 1 dash paprika
- 1 dash celery salt
- 1 cup vegetable oil

- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 1/4 cup chopped onions or shallots
- 1/4 cup fresh sliced mushrooms
- 3/4 teaspoon thyme (2 tablespoons fresh)

- 1 onion, chopped
- 2 garlic cloves, smashed
- 2 tablespoons roughly chopped fresh parsley leaves
- 1 cup milk
- 4 thick slices firm white bread, crust removed
- 1 1/2 pounds ground beef
- 1 1/2 pounds ground pork
- 1 large egg
- 1/2 cup freshly grated Parmigiano-Reggiano, plus more for serving

- 20 gm ginger, finely chopped
- 2 garlic cloves, finely chopped
- 1 tsp coarsely ground Sichuan peppercorns
- 1 tbsp chilli bean paste
- 1 litre (4 cups) chicken stock
- 2 tsp cornflour mixed with 1 tsp water
