- 5 cups vegetable or chicken broth, low sodium
- 1 package of rice noodles
- 1 cup red salsa
- 2 stalks celery, diced
- 2 radishes, sliced
- 2 cloves garlic, minced
- 1 green onion, sliced
- 1/4 cup cilantro, minced
- 1 lime, juiced
- 1 carrot, diced
- 1 Serrano pepper, sliced (optional)
- 1/2 tablespoon ginger, grated

This might be my shortest directions section ever
- 1/2 lb Light Velveeta Cheese, cubed
- 1 pack Perdue Short Cuts Southwestern Chicken (any chicken would work, but this gave it a nice spice)...about 1/2 lb chicken
- 1 14oz can Cream of Chicken Soup
- 2 14oz cans Original Rotel, undrained
- 1 medium onion, diced small
- 1 14 oz can chicken broth
- 1 4oz can mushrooms, undrained
Shrimp and Noodles

This low calorie shrimp and bean sprout (“noodles”) stir fry, is under 150 calories
- 1/2 bag of bean sprouts
- 3 oz. shrimp (bite size pieces)
- 2-4 leaves of basil (Thai or lime basil would be ideal, but regular sweet basil is fine)
- 1/2 tsp sesame oil
- splash of soy sauce (I use low-sodium version)
- generously season with salt free seasoning blend (I used Mrs. Dash Caribbean blend)
