- Wellington:
- 2 1/2 -3 lb. beef tenderloin
- olive oil
- 1 pkg. puff pastry sheets
- 1 egg yolk, lightly beaten
- sesame seeds
- 1 recipe of duxelles
- Duxelles:
- 1/2 lb. chopped mushrooms
- 1/4 c. chopped onion
- 2 Tbsp. butter
- 1/4 tsp. marjoram
- dash of black pepper
- 1 Tbsp. flour
- 2 Tbsp. beef broth
- 1 Tbsp. chopped parsley, or equal amount dried
- 1/3 c. finely chopped ham, cooked

- 1/4 Cup oil ( olive or good quality oil)
- 2 tbsp. vinegar (cider or other vinegar of your choice)

Slow Cooked Chicken with White Beans

Here’s a simple really tasty recipe to kick off the week
- Marinade:
- 1 - 5 lb organic chicken (2 breasts, 2 drumsticks, 2 wings, 2 thighs)
- 1 tbsp paprika
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 15 oz can whole peeled tomatoes
- 6 0z baby zucchini
- 1 15 oz can white beans
- 8 oz button mushrooms – quartered
- 2 garlic cloves – minced
- 1 cup red wine
- 1 lemon – zested
- 1 bouquet garni (oregano, thyme )
- 1 quart homemade organic chicken stock
- 2 tbsp olive oil (for searing chicken)
- 2 tbsp olive oil (for saute veg)

Easy, easy, easy to prepare
- Pie Filling:
- 4 pounds Granny Smith apples, peeled, quartered, and cored
- zest of 1 lemon
- zest of 1 orange
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon freshly squeezed orange juice
- 1/2 cup sugar, plus 1 teaspoon to sprinkle on top
- 1/4 cup all-purpose flour
- 1 teaspoon kosher salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
- Perfect Pie Crust, recipe follows
- 1 egg beaten with 1 tablespoon water, for egg wash
- Pie Crust:
- 12 tablespoons (1½ sticks) very cold unsalted butter
- 3 cups all-purpose flour
- 1 teaspoon kosher salt
- 1 tablespoon sugar
- 1/3 cup very cold vegetable shortening
- 6 to 8 tablespoons (about 1/2 cup) ice water

- 1 teaspoon oregano

A trip to the farmer’s market inspired a new take on an old favorite this week
- 1/2 lb thick sliced center cut bacon, diced
- 1/2 lb. mushrooms, sliced
- 1 bunch garlic scapes, sliced or 3 cloves of garlic
- 1/2 cup heavy cream or half and half
- 1/4 cup sun-dried tomatoes
- 1 cup fresh peas (frozen may be substituted)
- 1 lb shrimp, shells removed
- 1 lb. penne pasta
- Parmesan Reggiano for serving
FAST and EASY White Bean Soup

In a heavy bottom pot, over medium high heat, saute onion, carrot and celery in olive oil for about 5 minutes
- 1 tbs olive oil
- 1/3 cup chopped onion
- 1 carrot, peeled and chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 2 cans (15 oz each) cannellini beans, rinsed and drained
- 3 cups vegetable broth
- 1 tsp fresh thyme leaves
- Kosher salt and freshly ground black pepper
Irish Coddled Pork with Cider

This cider infused Irish stew is perfect with a side of colcannon
- small knob (1 Tb) butter
- 2 pork loin chops
- 4 rashers (slices) smoked bacon , cut into pieces
- 2 potatoes , cut into chunks
- 1 carrot , cut into large chunks
- 1 ⁄2 small swede (Rutabaga), cut into chunks
