Easy Cioppino

Serious Heat Heat the oil in a 12-inch skillet over medium-high heat until shimmering
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1 medium shallot, thinly sliced (about 1/4 cup)
- Kosher salt and freshly ground black pepper
- Pinch of dried red chili flakes or more as desired
- 1 teaspoon dried oregano
- 2 medium cloves garlic, minced (about 2 teaspoons)
- 1 (28 ounce) can whole peeled tomatoes, or 8 to 10 plum tomatoes, peeled, cored, and quartered
- 1 cup red wine
- 1 pound cockles or mussels, scrubbed
- 3/4 pound flaky white fish like cod or flounder
- 1/2 pound scallops, tough muscle removed
- 1/2 pound medium shrimp, peeled and deveined
- 1/2 cup loosely packed fresh parsley leaves, roughly chopped
- 1 lemon, cut into wedges
- Country bread, toasted and rubbed with extra-virgin olive oil, for serving

- 1 1/2 pounds chuck, shoulder clod, or rump, cut into inch cubes
- 1 tablespoon vegetable shortening or oil
- 1 ½ cups strong black coffee
- 2 tablespoons molasses
- 1 clove garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon crumbled dried oregano
- 1/4 teaspoon hot red pepper (cayenne)
- 1 1/2 cups water
- 4 carrots, cut into ½-inch slices

- For Filling:
- Fish and Lime Dipping Sauce
- 4 ounces dried thin rice stick noodles
- Boiling water, as needed
- 3/4 pound boneless pork loin, in one piece
- 12 large shrimp, peeled and deveined
- For Assembly:
- 12 dried large rice paper rounds, each 8½ inches in diameter
- 12 large red-leaf lettuce leaves or other soft, pliable lettuce, stiff stems discarded
- 1 large carrot, peeled and finely julienned, then tossed with 1 teaspoon sugar until softened, about 10 minutes
- 1 small English (hothouse) cucumber, peeled and finely julienned
- 12 fresh mint sprigs
- 12 fresh cilantro sprigs, plus extra leaves for filling
- 1 tablespoon coarsely chopped dry-roasted peanuts
