- 1/4 cup golden rum
- 1/4 cup lemon juice
- 10 cloves
- 10 allspice berries
- 1 bay leaf
- 1 large fillet of salmon
- Suggested wood chips: Hickory or apple

- 1 tsp Worcestershire sauce
- 10 whole peppercorns
- 1 bay leaf
- 1/2 large onion, cut into chunks
- For the Caramelized Onions (makes about 1 cup):
- 1/2 tablespoon extra-virgin olive oil
- 3 large onions, thinly sliced
- 1/2 tsp Kosher salt
- For the Peppers (makes about 2 cups):
