Vanilla Pudding Chocolate Chip Cookies

Preheat oven to 350 degrees F
- 1 cup unsalted butter, at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3.4 oz. package vanilla instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
Banana Chocolate Chip Muffins with Cinnamon Streusel

Preheat oven to 375ºF, and spray a 12-cup muffin pan with baking spray
- 2 medium bananas, mashed
- 2 tablespoons water
- 1/2 cup (1 stick) butter, melted
- 1/4 cup buttermilk
- 2 cups unbleached all-purpose flour
- 2/3 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips (I used regular but would love these with mini chips.)
Sunday Brunch Casserole

Directions In a large skillet, cook bacon over medium heat until crisp
- 1/2 pound sliced bacon (or turkey sausage)
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 12 eggs
- 1 cup milk

- 1¾ cups all-purpose flour
- ¾ cup plus 1 tbsp. cocoa powder
- 1½ tsp. baking powder
- 1½ tsp. baking soda
- 1 tsp. salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp. vanilla extract
- 1 cup boiling water
- For the frosting: (I will half this recipe next time)
- 8 large egg whites, at room temperature
- 2 cups sugar
- ½ tsp. cream of tartar
- 2 tsp. vanilla extract
