Four Cheese Baked Penne

Preheat oven to 400 degrees F
- 1 pound whole-wheat penne
- 1 1/2 cups small-curd low-fat cottage cheese
- 1 cup part-skim ricotta cheese
- 1 1/4 cups shredded part-skim mozzarella cheese, divided
- 3 tablespoons chopped parsley
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, finely chopped
- 1 (15-ounce) can low-sodium crushed tomatoes
- 1 (8-ounce) can low-sodium tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1/2 teaspoon chili flakes
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- Cooking spray
- 1/4 cup grated Parmesan (3/4 ounces)
Spinach Ravioli Bake

Place 1 cup spaghetti sauce in greased shallow 2-quart baking dish
- 2 cups spaghetti sauce
- 1 package (25 ounces) frozen ravioli
- 2 cups (8 ounces) shredded mozzarella cheese
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1/4 cup grated Parmesan cheese
Maple Bacon & Apple Baked French Toast

Quarter the rolls and place in a single layer on a baking sheet to dry out
- Topping:
- 21 King’s Hawaiian Sweet Rolls
- 10 slices of maple bacon (~12 oz)
- 1 large Fuji apple, peeled, cored, quartered and sliced
- 1 tablespoon maple syrup
- 8 large eggs
- 2 cups whole milk
- 1/2 cup heavy cream
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Pinch of salt
- 8 slices of maple bacon (~9 oz), cooked and crumbled
- 1/2 cup powdered sugar

- 1/2 box of Thin Mint Girl Scout Cookies (1 sleeve) + 3 cookies

- 1 package (16 oz.) of linguine
- 3 tablespoons olive oil
- 1 small sweet onion, thinly sliced
- 1 teaspoon garlic, minced
- 1 can (14.5 oz) Italian tomatoes, diced
- 1 can (10.5 oz.) chicken broth
- 2 cups broccoli florets
Chicken Tikka Masala

Combine the cumin, coriander, cayenne, and salt in a small prep bowl
- Chicken:
- 2 pounds boneless, skinless chicken breasts or tenders
- 1/2 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/8-1/4 teaspoon cayenne pepper (vary to your preference of spiciness)
- 1 teaspoon table salt (if you brine, use half)
- 1 cup plain, whole milk yogurt
- 2 tablespoons vegetable oil
- 2 teaspoons minced or pressed garlic
- 1 tablespoon grated fresh ginger
- Masala Sauce:
- 3 tablespoons vegetable oil
- 1 1/4 cups onion, diced small
- 2 teaspoons garlic, minced or pressed
- 2 teaspoons grated fresh ginger
- 1/2 jalapeno, ribs and seeds removed
- 2 tablespoons tomato paste
- 1 tablespoon garam masala
- 28-32 ounces crushed tomatoes (make sure they are plain, not Italian style)
- 2 teaspoon sugar
- 1/2 teaspoon table salt
- 3/4 cup heavy cream
- 1/3 cup chopped cilantro (omit if you don't like)
- 1 1/2 cups Basmati rice--cooked to package directions
