In a large dutch oven (or stock pot) heat 2 tablespoons of the olive oil over medium heat
- You will need:
- 2 tablespoons olive oil
- 2 medium yellow onions, diced
- 1 large shallot, mince
- 3 garlic cloves, pressed with garlic press
- 4 roma tomatoes, chopped
- 48 oz (6 cups) chicken stock
- 2 cups shredded cooked chicken
- 3/4 cup fresh cilantro, chopped
- Salt and ground black pepper, to taste
- Garnishes:
- fried tortilla strips
- 1 avocado, diced
- 1 cup shredded mozzarella
- 1 lime, cut into slices for serving
Whole Wheat Peanut Butter and Jelly Muffins

Preheat oven to 400. Lightly spoon flours into dry measuring cups; level with a knife
- 1 3/4 cups whole wheat flour
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups fat-free milk
- 1/3 cup creamy peanut butter (I used Smart Balance)
- 1/4 cup egg whites
- 2 tablespoons Earth Balance spread, melted
- 1 teaspoon vanilla extract
- 1/4 cup reduced-sugar grape jelly
- 1/4 cup reduced-sugar strawberry jelly

- 1 cinnamon stick

- Bechamel Sauce:
- 1/2 cup butter
- 3/4 cup flour
- 4 cups milk

- 1/2 cup pineapple juice
- 2/3 egg
- 1 1/3 tablespoons vegetable oil
- 1 2/3 tablespoons honey
- 1/2 teaspoon salt
- 2 cups bread flour
- 1 1/3 tablespoons dry milk
- 1 1/3 teaspoons fast rising yeast or 1 1/3 teaspoons quick-rising yeast
Oreo Truffles

Crush the Oreos - Ziploc bag and a rolling pin work well
- 1 package Mint Oreos
- 1 block cream cheese (1/3 less fat works)
- almond bark (I like to use both chocolate and white chocolate)

- 12 medium potatoes, peeled and cubed
- 2 cups (8 ounces) shredded cheddar or Swiss cheese, divided
- 1 1/4 cups milk

Heat oven to 350ºF. Spray 8x8 or 11x7 (2 quart) glass baking dish with cooking spray
- 1/4 lb bulk lean breakfast sausage
- 1 (10 ounce) can red enchilada sauce
- 1/2 cup crumbled queso fresco (Mexican cheese) or farmer cheese (2 1/2 ounce)
- 1/3 cup sour cream
- 1/4 cup chopped green onions
- 1 (16.3 ounce) can original or buttermilk biscuits
- 1 1/4 cups shredded Colby Jack cheese (5 ounce)

- For the Cake:
- 2 1/4 cups cake flour (I used Swan’s Down brand)
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1 1/4 cups buttermilk, room temperature
- 4 large egg whites, room temperature
- 1 1/2 cups sugar
- 1 stick (8 tablespoons) unsalted butter, at room temperature
- 1 teaspoon pure vanilla extract
- For the Filling:
- Jelly or Jam in your favorite flavor(s)
- For the Buttercream:
- 3 sticks unsalted butter, softened
- 1 cup creamy peanut butter
- 2 tablespoons vanilla extract
- 2 pounds confectioners’ sugar, sifted
- 6-8 tablespoons heavy cream (if using milk, amount will be less)
