Place pasta, vegetables, tomato sauce and chicken in a bowl and stir to mix well
- 1/2 cup to 3/4 cup cooked whole wheat pasta such as spirals, shells
- 1 cup cooked broccoli, asparagus, peppers and onions
- 1/4 cup light tomato sauce
- 4 oz. cooked chicken, lean ground turkey, chopped lean chicken sausage
Potato Salad with Tahini

Add water, salt and potatoes to a large pot and bring to a boil
- 4 cups water
- sea salt
- 1 lb. golden potatoes
- 1/2 cup tahini
- 1 tsp. salt
- freshly squeezed juice of one lemon
- 3-4 cloves garlic, minced
- 4 tbsp. olive oil
- 1 / tsp. ground cumin
- 1/2 tsp. paprika
Mini Kale & Parmesan Quiche

Preheat oven to 350F. Heat oil in a large frying pan
- 2 tbsp olive oil, plus extra for brushing
- 1/4 cup chopped onion
- 3 garlic cloves, chopped
- 1 1/2 lb. kale
- 4 sheets phyllo pastry
- 5 eggs
- 3/4 cup milk
- 1/2 cup grated Parmesan cheese
- salt and pepper
Shrimp and Tabbouleh with Feta

Bring 1 1/2 cups water to a boil in a pot and add bulgur
- 1 cup bulgur wheat
- 1 packed cup chopped parsley
- 1/4 cup fresh lemon juice
- 2 tbsp. olive oil
- pinch salt, cumin and dried mint
- 8 oz. medium, shelled, thawed shrimp
- 1 cucumber, seeded and chopped
- 1 cup chopped tomato
- 1 cup chopped green onions
- 1/4 cup crumbled feta
Quinoa and lentil soup

In a large soup pot on medium heat, saute onion and garlic in oil until tender
- 1 medium red onion, diced
- 3 cloves garlic, finely chopped
- 1-2 tbsp. oil
- 2 tsp dry curry spices
- 1 cup quinoa, rinsed
- 1 cup yellow lentils, rinsed
- 1 sweet potato, diced
- 6 cups of stock, chicken or vegetable
- sea salt and fresh ground pepper to taste
Oreo Cookie Cups

Place a paper muffin cup in each cup of a 12-cup muffin tin and coat paper with spray and set aside
- Vegetable spray
- 24 crushed Oreo cookies
- 12 whole Oreos
Rice salad with lentils and red wine vinegar dressing

Bring a pot of water to boil
- 3 cups water
- 2 cups red rice or use wehani rice or follow cooking directions for brown rice or basmati rice
- 1 cup cooked lentils
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 cup chopped green onions
- 1 cup diced cucumber
- 1/2 diced red pepper
- 1/4 cup toasted pine nuts
- 1/4 cup chopped fresh dill
- 2 tbsp chopped parsley
- salt and pepper to taste
Spinach Salad

Mix dressing. Assemble salad ingredients in a bowl
- Dressing:
- 3 tbsp. vinegar
- 2 tbsp. honey or sugar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. dry mustard
- dash Worcestershire sauce
- 1/4 cup olive oil
- 1 pkg. fresh spinach, washed
- 1 small red onion, thinly sliced
- 1 cup sliced mushrooms
- 6 slices bacon, crumbled
Chili Sauce

Simmer all ingredients together in a large pot for several hours until thick
- 6 quarts ripe tomatoes
- 8 large onions, chopped
- 1 hot pepper, chopped
- 3 sweet green peppers, chopped
- 1/4 cup pickling salt
- 1/2 cup sugar
- 1 tbsp. each: mustard seed, celery seed, cinnamon
- 1 tsp. each: allspice, chili powder
- 2 1/2 cups vinegar

- 1/2 cup Longo's pecan pieces
- 1 cup Longo's Pure Maple Syrup
- 4 egg yolks
- 1 pkg. unflavoured gelatin
