Bring a pot of salted water to a boil; add the quinoa and cookl until just tender, about 12 mins
- 2 cups quinoa
- 1 garlic clove
- 3/4 tsp. salt
- 2 tbsp. fresh lemon juice
- 1/2 tsp. black pepper
- 5 tb sp. olive oil plus more for drizzling
- 1 X 15.5 oz. can chickpeas, drained and rinsed
- 1/2 cup diced red pepper
- 1 pkg. fresh baby spinach leaves
Apple & Quinoa Kale Salad

In a medium saucepan, bring the quinoa and 2/3 cup of water to a boil
- Salad
- 1/2 bunch Kale, chopped
- 1 large Apple, diced
- 1/3 cup dry Quinoa (certified gluten-free if necessary)
- 1/3 cup chopped Almonds
- Vinaigrette
- 2 tablespoon Dijon Mustard
- 1 tablespoon Honey
- 1/4 cup Extra Virgin Olive Oil
- Pinch of Salt and pepper

- 2 tablespoons butter
- 1 large onion, chopped
- 1 celery, finely chopped

- 1 teaspoon chopped rosemary
- 1/3 cup chopped fresh parsley

- 4 skinless, boneless chicken breasts
- 1 tbsp. olive oil
- 2 large onions
- 4 large cloves garlic, crushed or 2 tbsp. minced garlic
- 4 cups chopped tomatoes or 2 X 28 oz. canned tomatoes, drained
- 4 green peppers, seeded and chopped
- 4 celery stalks, chopped
- 3 cups chicken bouillon
- 2 cups uncooked long-grain rice
- 1 tbsp. cumin
- 1 1/2 tsp. salt
- 1 tsp. each oregano, thyme, Tabasco
- 1/2 lb. smoked turkey, cut into 1/2" cubes (optional)
- 1 lb. shrimp (optional)
Sesame Ginger Dressing
