Moroccan couscous with dried fruit and pine nuts

Made with PC Moroccan-spiced Couscous
- 1/3 cup pine nuts
- 1 cup chicken broth
- 1 tbsp olive oil
- 1 pkg. PC Moroccan-spiced Couscous or 160 g couscous
- 1/3 cup Sultana raisins
- 1/3 cup dried apricots, diced
- 2 green onions, thinly sliced or use finely diced red onion
Grilled Ratatouille

Preheat oven to 425F. Whisk lemon juice, oil, vinegar, basil, sugar and salt together in a bowl
- 1/4 cup lemon juice
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp dried basil
- 1 tsp granulated sugar
- 1 tsp salt
- Fresh ground pepper
- 2 large tomatoes, chopped into large chunks
- 1 eggplant, chopped into large chunks
- 2 of: yellow, green or red pepper, chopped into large chunks
- 1 zucchini, halved and sliced I to chunks
- 1 red onion, sliced into chunks
- 1 minced garlic clove
- Fresh basil or cilantro leaves for topping, chopped if desired
Ranch Dressing or Dip

Mix all ingredients together
- 2 cups plain low-fat yogurt
- 1/4 cup mayo
- 1/2 tsp. garlic powder
- 1 tsp. each: minced onion, parsley
- 1/4 tsp. each: pepper, paprika, dill
- 1/2 tsp. celery salt

- 1/2 cup crumbled feta cheese
- zest and juice of 1 lemon
- 3 tbsp minced fresh oregano
- 2 cloves minced garlic
- 1 tbsp red wine vinegar
- black pepper, to taste
- greens, to serve
- olive oil, to taste
Layered Pumpkin Loaf

Preheat oven to 350F. Grease a 9"X5" loaf pan
- Filling:
- 1 cup canned or roasted fresh pumpkin
- 1 cup sugar
- 1/2 cup firmly packed brown sugar
- 3 egg whites (I use entire egg not to waste it!)
- 1/2 cup skim milk
- 1/4 cup vegetable oil
- 2 cups flour
- 2 1/2 tsp. baking powder
- 1/4 tsp salt
- 1 X 250 gram light cream cheese
- 1 egg white
- 2 tbsp sugar

- 1 medium Zucchini, ends removed and sliced
- Salt and Pepper to taste
- 1 tablespoon Olive Oil
- 1 medium Tomato, sliced

- 1 slice cheese (approx. 110 calories each)
- 2 large Flour Tortillas (approx. 120 calories each)
