1.Pour broth and coconut milk into a large saucepan and set over medium
- 900 ml container chicken broth
- 400 ml can regular coconut milk
- 1/2 tsp granulated sugar
- 1 tsp hot chili-garlic sauce
- 2 to 3 kaffir-lime leaves
- 1 skinless, boneless chicken breast, cut into thin bite-sized strips
- 227 g pkg sliced mushrooms or 90 g pkg enoki mushrooms
- 1 ripe tomato, chopped
- 1/2 454 g pkg medium shrimp, peeled
- 2 tbsp lime juice
- 2 tbsp fish sauce
- 1/4 cup finely chopped cilantro

- 1/2 cup whole wheat flour

- 1/4 cup Splenda
- 1/4 cup non-hydrogenated soft margarine
- 1 cup Splenda
- 3/4 cup liquid egg or 2 eggs
- 2 tsp. grated lemon zest
- 1/2 cup fresh lemon juice
- 1/4 cup buttermilk
- 2 tsp. cornstarch
- 1 tsp. baking powder
Falafel with Avocado Spread

To prepare patties, place pinto beans in a medium bowl; partially mash with a fork
- For the patties
- 1 (15-ounce) can pinto beans, drained and rinsed
- 2 ounces (approx. 1/2 cup) shredded Monterey Jack cheese
- 3/4 ounce (approx 1/4 cup) finely crushed baked tortilla chips
- 2 tablespoons finely chopped green onions
- 1 tablespoon finely chopped cilantro
- 1/8 teaspoon ground cumin
- 1 large egg white
- 1 1/2 teaspoons canola oil
- For the spread
- 1/4 cup mashed peeled avocado
- 2 tablespoons finely chopped tomato
- 1 tablespoon finely chopped red onion
- 2 tablespoons fat-free sour cream
- 1 teaspoon fresh lime juice
- 1/8 teaspoon salt
- Remaining ingredients
- 2 (6-inch) pitas, each cut in half crosswise

- 2 cups Sun rice
- 4 cups chicken stock
- 1 tbsp. oil
- 500 g. thinly sliced chicken breasts
- 1 tsp. crushed garlic
- 2 cups veggies: red pepper, green beans, broccoli, baby corn, snow peas, mushrooms, zucchini as desired
- 2 tbsp. oyster sauce
- 1/4 cup stock or water
Feta Couscous

In large pan, melt butter over medium high heat
- 1 tbsp. butter
- 2 cloves garlic, chopped
- 1 onion, chopped
- 2 stalks celery, thinly sliced
- 1 yellow pepper, diced
- 1 cup green beans, cut in pieces
- 1 X 19 oz. can diced tomatoes
- 1/2 cup orange juice
- 1/2 cup vegetable stock
- 1 cup couscous
- 1 X 19 oz. can chickpeas, rinsed and drained
- 2 tsp. each: fresh chopped oregano, mint (or use 2 tsp. dried)
- 1 1/2 cups diced or crumbled feta
- salt and pepper
- hot pepper sauce (to taste)
