Ingredients

  • 2

    cups cooked quinoa

  • 2

    tbsp capers

  • 1/3

    cup sliced Kalamata olives

  • 1/4

    cup chopped cherry peppers (hot or sweet)

  • 1/2

    cup crumbled feta cheese

  • zest and juice of 1 lemon

  • 3

    tbsp minced fresh oregano

  • 2

    cloves minced garlic

  • 1

    tbsp red wine vinegar

  • black pepper, to taste

  • greens, to serve

  • olive oil, to taste

Directions

1. In a large bowl combine cooked quinoa, capers, Kalamata olives, chopped cherry peppers, feta cheese, lemon zest and juice, oregano, garlic, red wine vinegar, and a few good grinds of black pepper. 2. Serve over a bed of greens and drizzle with olive oil.
