- 1 large onion, thinly sliced

- 2 garlic cloves, crushed

- 2 tsp ground coriander
- 1/4 tsp ground cardamom
- 1/2 tsp turmeric
- 1/4 tsp grated nutmeg
- 1 can chopped tomatoes, about 400 g
- 1 tsp cornflour mixed with 1 tbsp water
- 300 g (10 1/2 oz) plain low-fat yogurt
- 1 tbsp clear honey
- 125 g (4 1/2 oz) young spinach leaves
- juice of 1/2 lime
- 2 tbsp chopped fresh coriander, plus extra leaves to garnish

- 8 whole green cardamom pods, cracked
- juice of 1/2 lemon

- 3 large baking potatoes
- 1 head of broccoli, broken into florets
- 1 small head of cauliflower
- 2 large onions, chopped finely
- 5 tablespoons oil
- 4 cloves chopped garlic or puree (more to taste)
- 4 tablespoons flour
- 2 cups milk
- 1 block of soft silken UHT tofu
- 1 tablespoon cracked black pepper
- 1 tablespoon salt (more to taste)
- 7 tablespoons Parmesan
- 1/2 cup bread crumbs
