Vegetable & Garlic Chicken with Sun Rice

Ingredients
- 2 cups Sun rice
- 4 cups chicken stock
- 1 tbsp. oil
- 500 g. thinly sliced chicken breasts
- 1 tsp. crushed garlic
- 2 cups veggies: red pepper, green beans, broccoli, baby corn, snow peas, mushrooms, zucchini as desired
- 2 tbsp. oyster sauce
- 1/4 cup stock or water

Step 1
Bring stock and rice to boil. Cook as per directions. Remove from heat and stand. Heat oil in pan over moderately high heat and cook chicken and garlic until lightly browned, 3-4 mins., stirring continuously. Reduce heat and add veggies, oyster sauce and 1/4 cup water. Simmer 3-4 mins. until veggies are just cooked. Serve on or stirred through rice.
Tip: marinate chicken for 15 mins or longer in oyster sauce before cooking.
