- Crumb topping:
- 6 Granny Smith apples, peeled, cored and diced
- 1/4 cup sugar
- 3/4 teaspoon cinnamon
- Pinch of salt
- 5 ounces of butterscotch chips
- 1/4 cup all purpose flour
- 4 ounces Stella Artois Cidre
- 3 tablespoons butter, cubed
- 1/2 cup brown sugar
- 3/4 cup all purpose flour
- 1/2 cup instant oats
- Pinch of salt
- 1/2 cup butter, softened
- 1/2 cup pecans, chopped
White Chocolate Buckeyes

1.In a large mixing bowl, beat butter, peanut butter, and powdered sugar
- 1/2 cup butter, softened
- 1 1/2 cups creamy peanut butter
- 3 cups powdered sugar
- 24 ounces white chocolate almond bark, or white chocolate baking chocolate, coarsely chopped
- 1/2 cup peanut butter chips, for drizzling, if desired
Bran Flax Muffins

1.Preheat oven to 350 degrees F (175 degrees C)
- 1 1/2 1 1/2 1/2 cups all-purpose flour
- 3/4 3/4 3/4 cup ground flax seed
- 3/4 3/4 3/4 cup oat bran
- 1 1 1 cup brown sugar
- 2 2 2 teaspoons baking soda
- 1 1 1 teaspoon baking powder
- 1 1 1 teaspoon salt
- 2 2 2 teaspoons ground cinnamon
- 3/4 3/4 3/4 cup skim milk
- 2 2 2 eggs, beaten
- 1 1 1 teaspoon vanilla extract
- 2 2 2 tablespoons vegetable oil
- 2 2 2 cups shredded carrots
- 2 2 2 apples, peeled, shredded
- 1/2 1/2 1/2 cup raisins
- 1 1 1 cup chopped mixed nuts
- 1 1.Preheat to 350 to 350 degrees F (175 degrees C). Grease muffin pan or line with paper muffin liners.
- 3 3.Bake 350 15 to 20 (175 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Creamy Baked Chicken

- 6 chicken breasts
- 1 can cream of chicken soup
- 1/4 cup white wine
- 6 slices of mozzarella cheese
- 1 cup Stove Top chicken stuffing
- 1/4 cup melted butter
Holiday Mashed Potatoes

- 5 lbs potatoes (approximately 9 large)
- 8 oz. low-fat cream cheese
- 1 C low-fat sour cream
- 2 t onion salt
- 1 t salt
- pinch pepper
- 2 T butter
Butternut Squash Couscous Fritters

In a large bowl, mix the couscous, butternut squash, flour, eggs and spices together
- 1 butternut squash, cooked + mashed
- 1 1/2 cups cooked couscous
- 2/3 cup AP flour
- 2 large eggs, lightly beaten
- 1 tsp. red pepper chili flakes
- 1 tsp. ground cumin
- 1 tsp. ground ginger
- 1/2 tsp. salt

Avocado Strawberry Spinach With Poppy Seed Dressing

- Poppyseed Dressing Ingredients:
- 6 cups fresh baby spinach
- 1 pint strawberries, hulled and sliced
- 1 avocado, diced (or you can double this to 2 avocados!)
- 4 ounces crumbled gorgonzola or blue cheese
- 1/4 cup sliced almonds, toasted
- half a small red onion, thinly sliced
- poppyseed dressing (recipe below)
- 1/2 cup avocado oil (or any oil, such as olive oil)
- 3 Tablespoons apple cider vinegar
- 2 Tbsp. honey
- 1 Tbsp. poppy seeds
- pinch of ground dry mustard (optional)
