- 1 medium onion, thinly sliced
- 2 cloves garlic, sliced
- 2 Tbsp tomato paste
- 1/4 tsp red pepper flakes
- 7-1/2 cups water, divided
- 1-1/2 cups dry garbanzo beans, rinsed
- 1 pound butternut squash, peeled, seeded, and cut into large pieces
- 1 bunch Swiss chard, leaves and stems separated and roughly chopped
- 1 piece Parmesan cheese rind, plus grated Parmesan for topping
- 2 tsp kosher salt
- Freshly ground pepper, to taste
- 6 slices cooked bacon, crumbled
- Crusty bread and lemon wedges, for serving
