- 1 cup (2 sticks) unsalted butter (slightly softened)

Double Stuffed Carrot Sweet Potatoes

Preheat oven to 375°F. Cut potatoes in half lengthwise
- 4 large sweet potatoes (about the same size so they cook evenly)
- 1 cup carrots, diced

- 2 (28 ounce) cans baked beans with pork
