Chicken soup/stock

A great light recipe for chicken stock and chicken soup
- Chicken Stock (make one day ahead)
- 1 whole 3-4 pound chicken (rinsed and patted dry)
- 1 cup roughly chopped onion (no need to peel)
- 1 cup chopped carrot
- 1/2 cup chopped celery
- 1 pinch dried thyme
- 1 bay leaf (optional)
- 1 teaspoon salt
- 14 cups of water (3 1/2 quarts)
- Chicken Soup
- Chicken Stock from day before (about 12-14 cups)
- 2 cups pasta (Rotini is a good shape for this)
- 4 carrots, peeled and cut into thin slices
- 4 celery stalks, minced
- 3-4 pound chicken from day before
- Salt and Pepper to taste
Triple chocolate biscotti

Combine the flour, sugar, cocoa powder, baking soda, and salt in a medium bowl, and set aside
- These low-fat chocolate biscotti contain no butter and are drizzled with chocolate.
- 1 3/4 cups all-purpose flour
- 1/3 cup granulated sugar
- 1/2 cup natural unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 6 ounces milk chocolate, chopped (I used a little more–about 9 ounces)
- Preheat oven to 300˚F. Butter two cookie sheets.
Makeover Sunday Brunch Casserole Recipe

This is what I make for Easter brunch!
- 6 bacon strips
- 1 small onion, chopped
- 1 small green pepper, chopped
- 1 teaspoon canola oil
- 2 cartons (8 ounces each) egg substitute
- 4 eggs
- 1 cup fat-free milk
- 4 cups frozen shredded hash brown potatoes, thawed
- 1 cup (4 ounces) shredded reduced-fat cheddar cheese
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon dill weed
Five-Cheese Jumbo Shells Recipe

Preheat oven to 350°. Cook shells according to package directions for al dente; drain
- 24 uncooked jumbo pasta shells
- 1 tablespoon olive oil
- 1 medium zucchini, shredded and squeezed dry
- 1/2 pound baby portobello mushrooms, chopped
- 1 medium onion, finely chopped
- 2 cups reduced-fat ricotta cheese
- 1/2 cup shredded part-skim mozzarella cheese
- 1/2 cup shredded provolone cheese
- 1/2 cup grated Romano cheese
- 1 Eggland's Best Egg, lightly beaten
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
- 1 jar (24 ounces) meatless spaghetti sauce
- 1/4 cup grated Parmesan cheese
Almond Butter Cookies

- 1/2 Cup White Sugar
- 1/2 Cup Brown Sugar
- 1/2 Cup Butter, Softened
- 1/2 Cup Almond Butter
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Almond Extract
- 1 Egg
- 1 1/4 Cups All Purpose Flour (use 1/8 cup additional flour for high altitude)
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Salt

Sift together the flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg into a bowl

- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 cup butter, softened
- 1 1/3 cups sugar
- 2 eggs, beaten until frothy
- 1 cup mashed cooked or canned pumpkin
- 3/4 cup milk
- 3/4 cup chopped walnuts or pecans

Use this recipe for any buttercream icing you need for cake decorating
- 9-1/2 cups powdered sugar
- (1 2# bag = 7-1/2 cups)
- 2-1/2 cups shortening
- 2 TBS wedding bouquet flavoring (or substitute your flavoring of choice in the appropriate amount) Sometimes I use almond flavoring.
- 6 TBS hot coffee creamer liquid (see recipe for Hot Coffee creamer)
Mario Batali's Eggplant Parm Stacks

Baked eggplant parmesan
- 2 large purple eggplants (sliced in 1 inch rounds)
- 1 head of garlic cloves (peeled and thinly sliced)
- 1 cup basil leaves
- 2 cup Mario's classic tomato sauce
- 1.5 balls of mozzarella (sliced into 1/4 in rounds)
- 1/4 cup bread crumbs
- 1 tablespoons chili flake
- 2 teaspoons fresh thyme
- 1/4 cup extra virgin olive oil (plus 1/4 cup)
- salt and pepper to taste
