Chef John's Make-Ahead Turkey Gravy

Preheat oven to 400 degrees F (200 degrees C)
- 1 large onion, chopped
- 2 carrots, chopped
- 2 ribs celery, chopped
- 2 teaspoons vegetable oil
- 2 large turkey wings
- 2 tablespoons cold water

- 2 cloves garlic (optional)

- 3 tsp. baking powder
- 1 package vanilla pudding
- 1/2 tsp. popcorn salt
- 1 1/2 cups butter or 2 1/2 sticks

- 1 tbs. heavy cream

- 1 onion, chopped
- 1 clove garlic, pressed
- 1 to 2 t. oil
- 14-1/2 oz. can beef broth
- 14-1/2 oz. can chicken broth
- 10-3/4 oz. can cream of chicken soup
- 1-1/2 c. water
- 6-3/4 oz. can chicken, drained
- 4 -oz. can chopped green chiles
- 2 t. Worcestershire sauce
- 1 T. steak sauce
- 1 t. ground cumin
- 1 t. chili powder
- 1/8 t. pepper
- 6 corn tortillas, cut into strips
- 1 c. shredded Cheddar cheese
BBQ Ribs (slow cooked)

* In a blender, combine the yogurt, milk, sugar if desired and chocolate syrup
- 1 * 1 cup (8 ounces) cappuccino or coffee yogurt

Enchiladas: Preheat oven to 425 degrees, and line a sheet pan with parchment paper

- 1/4 cup fat-free ricotta cheese
- 2 tbsp. reduced-fat Parmesan-style grated topping
- 2 tbsp. pine nuts
- 1 tsp. olive oil
- 1 tsp. chopped garlic
- 1/4 tsp. salt, or more to taste
