- 4 cups cubed butternut squash (I buy the bags at Walmart)
- 2 leeks clean well and slice
- 1 small onion chopped
- 1 stalk celery sliced
- 1 carrot sliced
- 1 large potato cubed
- 3 chicken cubes I use Knorr
- 1 bay leaf
- 4 cups water
- 1 1/2 c Orange Juice
- 1 cup 1/2 and 1/2
Green Chile Sauce

Use green chile sauce in chicken enchilada casseroles or with scrambled eggs and tortillas, polenta and pulled pork
- 5 green chile peppers
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 Tbsp oil
- 5 tsp. flour
- 1/2 tsp. coriander
- 2 cups chicken broth
- 12 tsp. salt
- 1 tsp. lime juice

- One 15-ounce can (425 grams) chickpeas, also called garbanzo beans
- 1/4 cup (59 ml) fresh lemon juice, about 1 large lemon
- 1/4 cup (59 ml) tahini
- Half of a large garlic clove, minced
- 2 tablespoons olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Pinch cayenne pepper (optional)

- 3 large baking potatoes (2-1/4 lb.)
- 1/2 cup fat-free reduced-sodium chicken broth
- 1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided
- 1/3 cup thin green onion slices
- 1/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1 tsp. GREY POUPON Dijon Mustard
- 1/4 tsp. paprika

Chips And Guacamole (Clean Eating)

Remove skins, and place avocados in a large mixing bowl, along with all other ingredients
- Guacamole:
- 4 ripe avocados
- Juice of 1 lemon or lime
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 teaspoon salt
- Tortilla Chip Ingredients:
- 1 package corn tortillas (I use Traders Joe’s Corn Tortillas – the cleanest I’ve found so far)
- 1/2 teaspoon salt
- 1 tablespoon garlic powder
- Lemon juice (at least 2 lemons worth if you like “zing” on your chips)
- 1 teaspoon olive oil
