Hi-Hat Cupcakes

A fun and simply wonderful looking cupcake!
- * FOR THE BATTER
- 3 * 3 ounces unsweetened chocolate, chopped
- 1 * 1 cup all-purpose flour
- 1/2 * 1/2 teaspoon baking powder
- 1/2 * 1/2 teaspoon baking soda
- 1/4 * 1/4 teaspoon salt
- 1/2 * 1/2 cup (1 stick) unsalted butter, softened
- 1 1/4 * 1 1/4 cups sugar
- 2 * 2 large eggs
- 1 * 1 teaspoon vanilla extract
- 1/2 * 1/2 cup sour cream
- * FOR THE FROSTING
- 1 3/4 * 1 3/4 cups sugar
- 3 * 3 large egg whites
- 1/4 * 1/4 teaspoon cream of tartar
- 1 * 1 teaspoon vanilla extract
- 1/2 * 1/2 teaspoon almond extract
- * FOR THE CHOCOLATE COATING
- 2 * 2 cups chopped (about 12 ounces) semisweet chocolate
- 3 * 3 tablespoons canola or vegetable oil
Pasta and beans

Heat oil in a large nonstick skillet over medium-high heat
- 2 teaspoons olive oil
- 2 cups chopped tomato
- 2 garlic cloves, minced
- 3 cups hot cooked angel hair (about 6 ounces uncooked pasta)
- 1/2 cup chopped fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 1/2-ounce) can chickpeas (garbanzo beans), drained
- 1/2 cup (2 ounces) grated Asiago cheese
- 2 tablespoons balsamic vinegar
- Basil sprigs (optional)
Waldorf Salad - low fat

A low-fat version of a very good salad
- 1/2 * 1/2 cup chopped, slightly toasted walnuts
- 1/2 * 1/2 cup celery, thinly sliced
- 1/2 * 1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)
- 1 * 1 sweet apple, cored and chopped
- 3 * 3 Tbsp mayonnaise or yogurt
- 1 * 1 Tbsp fresh lemon juice
- * Salt
- * Pepper
- * Lettuce
Sunshine Crepes

In a large bowl, beat the milk, eggs and oil
- FILLING:
- Ingredients
- 2/3 cup milk
- 2 eggs
- 1 tablespoon canola oil
- 1/2 cup all-purpose flour
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1 can (20 ounces) crushed pineapple, drained
- 1 can (11 ounces) mandarin oranges, drained
- 1 teaspoon vanilla extract
- 1 carton (8 ounces) frozen whipped topping, thawed
- Confectioners' sugar
Soft Pretzel Bites

1. Pour 1 1/2 cups warm water into your stand mixer
- 1 1/2 C warm water
- 2 T brown sugar
- 1 T yeast (I use active dry)
- 6 T butter, melted
- 2 1/2 t salt
- 4 1/2-5 C flour
- 12 C water
- 3/4 C baking soda
- 1 egg, beaten until frothy
- Coarse Pretzel Salt
Chocolate Fudge Frosting

Frost up to 16 cupcakes
- Chocolate Fudge Frosting:
- 4 ounces (120 grams) unsweetened chocolate, coarsely chopped
- 2/3 cup (150 grams) unsalted butter, room temperature
- 1 1/3 cups (160 grams) confectioners (powdered or icing) sugar, sifted
- 1 1/2 teaspoons pure vanilla extract

Marshmallow Puffs

Mocha buttercream

A great icing to use on chocolate cupcakes! Can top cupcake with a chocolate covered espresso bean for decoration
- 1/2 cup solid vegetable shortening
- 1/2 cup (1 stick) butter, softened
- 1 square unsweetened chocolate, melted
- 1 tablespoon instant coffee
- 1 teaspoon clear vanilla extract
- 4 cups (approx. 1 lb) confectioners' sugar
- 2 tablespoons milk
Salted Caramel Chocolate Biscotti
