Smoky Beef-and-Bacon Chili

- 2 slices thick-cut bacon, finely chopped
- 1 large onion, finely chopped
- 1 large garlic clove, minced
- 1 1/2 pounds lean ground beef
- 1 tablespoon plus 1 1/2 tsp. chili powder
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons smoked Spanish paprika (see Notes)
- 1/2 teaspoon to 1 1/2 tsp. cayenne pepper
- About 1 tsp. salt
- 1 can (14.5 oz.) crushed fire-roasted tomatoes (see Notes) or regular crushed tomatoes
- 1 can (8 oz.) tomato sauce
- 1 cup beer (India Pale Ale or pilsner)
- 1 teaspoon Worcestershire
- 1 can (14.5 oz.) pinto beans, drained
- Sour cream, sliced scallions, and/or grated cheddar for topping

Here’s a quick and easy spread you can whip up for any occasion
- 2 cloves garlic
- 1/3 cup toasted pumpkin seeds (pepitas) plus extra to garnish
- 2 tablespoons roughly chopped cilantro
- 1 small serrano chile, seeded and roughly chopped
- 8 ounces goat cheese
- 3 ounces cream cheese
- 1/4 cup heavy cream, yogurt or sour cream
- Salt
- 1/4 cup recipe ready julienne cut smoked sun dried tomatoes (we prefer the California Sun Dry brand)
- Crackers and toasted baguette slices
Thai Ground Beef Curry

Heat a skillet or wok over medium heat and add onion and Thai chilies
- 1 1/2 tbs olive oil
- 1 red onion, chopped
- 2-3 Thai bird chilies, slit but keep intact
- 1 lb ground beef
- 3 garlic cloves, minced
- 1 in ginger, minced
- 1 tbs red curry paste
- 1 cup tomato sauce
- 2 tbs fish sauce
- 1 giant handful of Thai basil
- 1 medium broccoli head, chopped into florets
- 2 tsp fresh lime juice
- 1/2 tsp turmeric
- 1/2 tsp cumin

Beef Nihari

Place the onions in a 4- or 5-quart slow cooker, and set the meat on top
- 2 medium yellow onions, peeled, cut in half, sliced
- 2 lbs beef brisket, trimmed of fat
- 1 2-inch piece fresh ginger root, peeled and cut into chunks
- 10 cloves garlic, peeled
- 1 heaping tsp ground (powdered) ginger
- 4 green or white cardamom pods
- 3 bay leaves
- 1 4-inch cinnamon stick
- 1 Tbsp garam masala
- 2 Tbsp ground fennel
- 1 Tbsp ground mild (red) chile pepper
- 2 pinches ground nutmeg
- 1 tsp turmeric
- 1 tsp kosher salt
- 1 tsp black salt (or substitute kosher salt)

Easy Pressure Cooker Beef and Broccoli Recipe

Instructions Start by slicing the meat against the grain in thin slices
- 2 pounds of meat (chuck roast, rump roast or flank steak), cut into thin strips
- 3 tablespoons olive oil or peanut oil
- 1 medium onion, diced
- 1 cup beef broth
- 2 tablespoons garlic, minced
- 1/2 cup soy sauce (I prefer a low sodium soy sauce)
- 2 tablespoons brown sugar
- 1 bag frozen broccoli (or 1 pound of fresh broccoli if you prefer)
- 1 teaspoon ground ginger
- 2 tablespoons starch
- Serve with white rice
