Shepherd's Pie

Directions Coat a wide pan with olive oil and bring to a medium-high heat
- Ingredients
- Extra-virgin olive oil, as needed
- 2 pounds boneless lamb shoulder or leg, cut into 1/2-inch dice
- Kosher salt
- 1/2 cup flour
- 2 large leeks, white part only, cut into 1/2-inch dice
- 3 ribs celery, cut into 1/4-inch dice
- 3 carrots, peeled and cut into 1/4-inch dice
- 2 cloves garlic, smashed and finely chopped
- 1/4 cup tomato paste
- 1 cup red wine
- 3 to 4 cups chicken stock
- 2 bay leaves
- 1 bundle fresh thyme
- 2 pounds Yukon gold potatoes, cut into 1-inch dice
- 3/4 to 1 cup heavy cream
- 2 to 3 tablespoons cold butter
- 1 cup frozen peas
HURRICANE PUNCH

Directions: Boil water and sugar till dissolved
- Ingredients:
- 1/2 cup sugar
- 1/2 cup water
- 8 cups (1 carton) orange-pineapple juice
- 1 Cup light rum
- 1 Cup dark rum
- 1 Cup grenadine
- 1/4 Cup Triple Sec
- 1/4 Cup fresh lemon juice
- 1/4 Cup fresh lime juice
- 1 tsp almond extract
- 1 liter or more (1/2 bottle) lemon-lime soda
- orange slices and marachino cherries for garnish
Orange Margueritas

Directions: Mix ingredients
- 2 Cups Tequila Mix
- 1/2 Cup Tequila
- 1/2 Cup Triple Sec
BOSTON CREAM PIE

Directions: Preheat oven to 350 degrees
- Ingredients:
- 1 cup sifted flour
- 1 teaspoon baking powder
- 3 medium eggs
- 1 cup sugar
- 1/3 cup hot milk
- 1 teaspoon lemon juice
- Filling:
- 2 cups milk
- 1/3 cup sugar
- 1/8 teaspoon salt
- 3 egg yolks, lightly beaten
- 3 tablespoons cornstarch
- 2 tablespoons butter
- 2 teaspoons vanilla
- Glaze:
- 2 ounces unsweetened chocolate
- 1 teaspoon butter or margarine
- 1 cup confectioners’ sugar
- 3 tablespoons water
CLAMS CASINO

- 2 cans minced clams
- 1/4 to 1/2 lb fresh (or canned) mushrooms cut up
- Garlic toe
- Parsley
- 2 Tbsp flour
- Juice from one can of clams
- 1 Cup Half and Half
- 2 Tbsp white wine
- Buttered bread crumbs and crumbled bacon on top

Mix dry ingredients well until all flour is incorporated and looks like fine cornmeal (use pastry blender)
- 3 cups flour
- 1 heaping cup of Crisco
- 1 tsp salt
- 1 tsp cream of tartar
- 1/2 or more ice cold water
Lee's Cobbler

- 3/4 cup self rising flour or regular flour with 2 tsp baking powder
- 1 cup sugar
- pinch salt
- 3/4 cup milk
- 1 stick butter
- 2 cups fruit
White Sangria

Directions Combine sugar, Calvados, lime, lemon, peaches and apples in a large pitcher
- Ingredients
- 3 tablespoons sugar
- 3 shots Calvados or other apple liquor
- 1 lime, sliced
- 1 lemon, sliced
- 2 ripe peaches, cut into wedges
- 3 ripe green apples seeded and cut into wedges
- 1 bottle white Rioja Spanish wine or other dry white wine
- 1 pint raspberries
Broccoli Chicken Bake

Cook onion and celery in water until tender - 30/40 minutes
- 3 pkgs. frozen broccoli spears (cooked - not overly done)
- 6-8 boneless chicken breasts
- 2 cans cream of chicken soup (undiluted)
- 1 cup mayo
- 1 t. curry powder
- 4 t. lemon juice
Spinach and Mandarin Orange Salad

Dressing One quarter cup dry red wine One half cup vegetable oil One quarter cup sugar 1 tsp
- 2 lbs. fresh spinach leaves torn into bite sized pieces.
- 2 large cans (about 8 oz. each) mandarin oranges drained
- One quarter cup almonds, slivered
- 3 oz. real bacon bits
- 2 eggs hard-boiled and diced
- One quarter cup green onions chopped
