Baked Summer Squash

Ingredients

  • 1 1/2 to 2 lbs. summer squash(zucchini, yellow, etc.)
  • 1/4 cup olive oil
  • 1/3 cup bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 cup chopped fresh herbs, such as basil, thyme, parsley and oregano

Step 1

Preheat oven to 350 degrees. Remove stem ends and slice squash crosswise into 1/4 inch rounds. Toss with olive oil. In a small bowl, combine bread crumbs, parmesan, salt and pepper. Arrange half the squash rounds in bottom of a 13x9 rectangular baking dish. Sprinkle with half the breadcrumb mixture. Arrange remaining squash on top and sprinkle remaining bread crumb mixture. Cover baking dish with foil and bake in oven for 30 minutes. Remove foil and bake another 5 minutes. Top with shredded herbs and serve
