Hearty Salmon Chowder

Drain & flake salmon, reserving liquid
- 1 can (7.5 oz.) salmon
- 2 t soft marg.
- 1/2 cup each chopped onion & celery
- 1/4 cup chopped gr.pepper
- 1 clove garlic (minced)
- 3 cups diced potatoes
- 1 cup diced carrots
- 1 cup each chicken stock & water
- 1/2 t each coarse pepper & dill seed
- 1 cup diced zucchini
- 1 can (14 oz) 2% evaporated milk
- 1 can (10 oz) cream style corn
- pepper
- 1/2 cup chopped parsley
Classic Maryland Crab Cakes

Excellent Recipe!
- 1 lb. jumbo lump crabmeat
- 1 lg. egg
- 1/4 cup mayo
- 1 1/2 t Dijon mustard
- 1 1/2 t Old Bay seasoning
- 1 t fresh lemon juice
- 1/2 t worcestershire sauce
- kosher salt
- 1 1/4 cup fresh breadcrumbs (from soft white sandwich bread, such as pepperidge farm)
- 2 T unsalted butter
- 1 T chopped fresh flat-leaf parsley
- 1 T olive oil
- lemon wedges for serving
Strawberry Rhubarb Cridp

Yummy!
- 4 cups fresh rhubarb, 1"dice (about 4-5 lg. stalks
- 4 cups fresh strawberries, hulled and halved if lg.
- 1 1/4 cup white sugar
- 1 1/2 t orange zest
- 1 T corn starch
- 1/2 cup freshly squeezed orange juice
- 1 cup all purpose flour
- 1/2 cup lightly packed brown sugar
- 1/2 t kosher salt
- 1 cup quick cooking oats (not instant)
- 12 T (1 1/2 sticks) cold unsalted butter, diced
- Vanilla ice cream for serving
Peanut Sauce

DIVINE!!! Sauce good for pork, chicken or beef satay, beef teriyaki sticks and Vietnamese rice paper rolls
- 2-4 T chicken or veggie broth (or water)
- 3 T peanut butter
- 3 T soy sauce
- 2 T brown sugar or honey
- 1 T rice vinegar or lime juice
- 1-2 cloves crushed garlic
- 1-2 t grated fresh ginger
- 1 t sesame oil (optional)
- 1/4 -1/2 t curry paste (optional)
Salsa Verde

Put tomatillos and chilis in a container with boiling water for 4 minutes
- 6 tomatillos
- 3 chilis (serrano or jalapeno)
- garlic
- 1/4 onion (minced finely)
- cilantro to taste
- salt to taste
French Dressing

Mix all ingredients together and let sit a couple hrs
- 2 parts oil
- 1 part vinegar
- 3 T ketchup
- 2 T sugar (or add to taste - S uses 1/2 t.)
- salt & pepper to taste
- 1/2 t dry mustard
- 1 clove garlic
- 1 t worcestershire sauce
Roast Tomatoes and Spinach

Place halved tomatoes, onions and garlic in pan, drizzle with olive oil, sprinkle with salt & pepper
- Roma Tomatoes - about 10 halved
- 1 onion chopped
- few garlic cloves, sliced
- olive oil
- salt & pepper
- 2 - 3 about 2 - 3 cups fresh spinach
Christmas Salad

Put eggs in double boiler, add vinegar and sugar beating constantly until smooth & thickened
- 2 eggs, beaten
- 4 Tbsp. white vinegar
- 4 tbsp. white sugar
- 1 cup cream or dream whip
- 2 tbsp. butter
- 1 cup red cherries
- 1 cup green cherries
- 2 cups pineapple chunks
- 2 cups miniature marshmallows
- 2 cups mandarin oranges
Maple Chomeur Cakes

Cream together butter and sugars until light and fluffy
- 3/4 cup butter (room temp.)
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 t vanilla
- 1 3/4 cups AP flour
- 1 t cinnamon
- 1 t baking powder
- 1 cup maple syrup
- 1 cup whipping cream
- pinch kosher salt
Escalloped Corn A La "Jiffy"

Melt 1 stick butter in an 8"x11" glass dish
- 1 stick butter
- 1 can cream style corn
- 1 can whole kernel corn
- 8 oz. sour cream
- 1 box Jiffy cornmeal muffin mix
- black pepper
- chopped bell pepper
