Mini Sausage Quiches

These crustless mini quiches are like portable omelets
- virgin olive oil 1/4 cup sliced scallions 1/4 cup shredded Swiss cheese 1 teaspoon freshly ground pepper 5 eggs 3 egg whites 1 cup 1% milk Optional
- 8 ounces mushroom, sliced
Chocolate Icing

Mix sugar & cornstarch in double boiler, add cocoa & salt
- 1/2 c wh. sugar
- 1 1/2 T cornstarch
- 3 T cocoa
- dash of salt
- 1/2 c boiling water
- 1 1/2 T butter
- 1/2 t vanilla
Riz Creme (Norwegian X-mas Pudding)

Christmas tradition
- 3/4 c long grain rice
- 1 t salt
- 4 c whole milk
- 1/2 c sugar
- 1 t almond extract
- 1 pint heavy cream - whipped & sweetened
- 1/2 cup chopped blanched almonds
- 1 whole almond with skin
Pea & Peanut Salad

- 2 cups frozen peas
- 1 cup peanuts
- 1 cup chopped celery
- 1/4 cup red onion (chopped fine)
- 6 slices bacon (cooked crispy & crumbled)
- 1/2 cup mayo
- 1/4 cup Italian salad dressing
Zucchini Appetizers

Whisk together eggs and oil
- 3 cups shredded zucchini
- 1 cup chopped onion
- 2 T chopped parsley
- 2 large cloves minced garlic
- 1 t baking powder
- 1 tsp salt
- 1 t chopped oregano
- 1/4 cup veg oil
- 1 cup flour
- 5 eggs
- 1 cup parmesan cheese
- 1 cup cheddar cheese
- 2 jalapeno peppers (1 with seeds, one without)
- optional - green peppers, mushrooms, hot chillli peppers
Almond Pine Cones

- Mix &Chill overnight:
- 1 1/4 cups almonds (with skins)
- 1 x 8 oz. ccream cheese
- 1/2 c mayo
- 5 bacon slices, cooked & crumbled
- 1 T green onion
- 1/2 t dill weed
- 1/8 t pepper
Old Bay Seasoning Mix

Combine all ingredients and mix thoroughly
- 1 T ground dried bay leaves
- 2 t celery salt
- 1 1/2 t dry mustard
- 1 1/2 t ground black pepper
- 1 t sweet or smoked paprika
- 1 t ground celery seeds
- 1/2 t ground white pepper
- 1/2 t ground nutmeg
- 1/2 t ground ginger
- 1/4 t crushed red pepper flakes
- 1/8 t ground cloves
- 1/8 t ground mace
- 1/8 t ground cardamon
- 1/8 t ground allspice
Caesar Dressing

Put all but oil & lemon juice in blender & process for few seconds
- 3-4 clovese garlic
- 1 1/2 tsp. capers
- 1 1/2 tsp. dijon mustard
- 1 1/2 tbsp. Red wine vinegar
- 1-2 tsp. anchovy paste
- 3-6 drops tobasco
- 6-12 drops worcestershire
- pepper
- 2 egg yolks
- 1 egg
- 1 1/2 cups oil
- 1 tsp. lemon juice
Tortilla Crackers

Cut tortilla shells into wedges, Set aside Mix remaining 8 ingredients together in large bowl
- 16-24 x 10" flour tortilla shells
- 1/4 c melted butter
- 1/4 c olive oil
- 1 t garlic salt
- 1/2 t basil
- 1/2 t coriander
- 1 t dried oregano
- 1/2 t cumin
- 1 T parsley
Santa Maria Beans

1) Combine beans & water in large kettle
- 2 x 1 lb. pkg. Pinquinto or Pinto Beans - rinsed & draiuned
- 1 1/2 quart cold water
- 2 x 16 oz. can whole tomatoes
- 1 ham hock (1 lb,) cracked
- 2 lg. white onions, chopped
- 2 c bottled salsa sauce
- 1/2 lb., salt pork - 4 pieces
- 2 t leaf oregano, crumbled
- 1/4 t crushed red pepper
