Pecan Pie Bars

Pour pecan mixture evenly onto HOT crust
- crust:
- 1 1/4 c flour
- 3 T br. sugar
- 1/2 c butter or marg.
- Mix together, press evenly into 11X7 pan & bake in 375 for 20 min.
- Mix:
- 2 beaten eggs
- 1/2 c br. sugar
- 1/2 c chopped pecans
- 1/2 c light corn syrup
- 2 T melted butter or marg.
- 1 t vanilla
- Mix together well.
Onion Salad

Great with roast beef
- Mix:
- 2 large sweet onions thinly sliced
- 1 cup water
- 2 tsp. salt
- 1 cup white vinegar
- 3/4 cup white sugar
- Dressing:
- 2 tsp. celery seed
- 1/2 cup mayo
- salt & pepper
- 1/2 cup fresh cream
- vinegar
- brown sugar
- mustard
Pot Roast

Mix spice, salt & pepper together and rub into meat
- 4 lb. pot roast
- 1 tsp. seasoning spice
- 3 bay leaves
- 2 T oil
- 1 t salt
- 1/2 t pepper
- 1 sliced onion
- 3 crushed garlic cloves
- 1 can mushroom soup
- 1 can beef broth, consomme, or 3/4 cup water
- 1/2 cup wine
- 2 T worcesteshire
- 1 package onion soup mix
Paula Deen's Seasoning Spice

Mix ingredients together. Good for everything and lasts up to 6 months
- 1 cup kosher salt
- 1/4 cup fresh ground black pepper
- 1/4 cup garlic powder
Hearty Salmon Chowder

Drain and flake salmon, reserving liquid
- 1 can (7.5 oz) salmon
- 2 t soft margarine
- 1/2 cup each chopped onion and celery
- 1/4 cup chopped sweet green pepper
- 1 clove minced garlic
- 3 cups diced potatoes
- 1 cup diced carrots
- 1 cup each chicken stock and water
- 1/2 t each coarse pepper and dill seed
- 1 cup diced zucchini
- 1 can (14 oz) 2% evaporated milk
- 1 10 0z can cream corn
- pepper
- 1/2 cup fresh parsley
Ceasar Salad Dressing

Good for veggie dip as well when dill added
- 1 cup mayo
- 1 cup sour cream
- 1/4 cup grated parmesan cheese
- 3-4 crushed garlic cloves
- 1 tsp dry mustard
- 1 tsp dill
- 1 tsp worchestershire sauce
- Fresh Lemon juice to taste
Salad Dressing

Mix dry ingredients in saucepan
- 3/4 c wh. sugar
- 2 t dry mustard
- 2 t flour
- 2 eggs
- 3/4 c vinegar
- 1/4 c water or milk
- 1/4 t salt
Crumb Cake

2 c flour 1 c white sugar 1 c butter Mix with pastry cutter until crumbs form
- 2 c flour
- 1 c white sugar
- 1 c butter
- 2 eggs
- 1/2 t nutmeg
- 1/2 t cinnamon
- 1 T vinegar
- 1 c milk
- 1 t baking soda
Mushroom Canape

Remove stems from mushrooms and chop fine
- 2 T butter
- 1 T flour
- 1 t mustard
- dash salt, pepper & nutmeg
- 1 T chives
- 1 T parsley
- 2 chopped gr. onions
- 1 cup sour cream
- 12 lg. mushrooms
Shrimp Dip

Mix well until creamy
- Combine:
- 1 can or fresh cooked shrimp (approx. 5 oz.)
- 1 cup cream cheese
- 3 T chili sauce
- 2 T onion juice
- 2 t lemon juice
- 1-2 T cream (if needed)
