Meat Loaf

Makes 2 loaf pans
- 1 pkg. @ ground beef, pork & turkey, chicken or veal
- 3 carrots - shredded
- 3 stalks celery - diced
- 1 lg. onion - diced
- 3 cloves garlic - minced
- 2 eggs
- 1/2 cup bread crumbs
- 1/2 cup milk
- 1/3 cup catsup
- fresh rosemary, parsley, dill & oregano chopped fine
- 2 T horseradish
- 2 T Worcestershire
- few dashes tobasco
- salt
- pepper
- beef type seasoning, like áu jus', oxo, onion soup mix., etc.
Butter Pecan Rolls

Soften yeast in water & sugar
- Topping:
- 1 pkg. yeast
- 1/4 c warm water
- 1 t sugar
- 1 c scalded milk
- 1/4 c shortening
- 1/4 c sugar
- 1 t salt
- 3-3 1/2 c flour
- 1 beaten egg
- 4 T melted butter
- 1/2 c sugar
- 2 t cinnamon
- 1 c brown sugar
- 1/2 c butter
- 2 T corn syrup
- 2/3 c chopped pecans
Coquille St. Jacques

Can use in casserole or put in individual appy dishes
- 3 minced scallions, (or 1/2 cup onion)
- 1/2 tsp. pepper
- 1/4 cup bread crumbs
- 1 pint clams & juice
- 2 lbs. scallops - sliced
- 2 Tbsp. butter
- 1/2 tsp. thyme
- 2 tbsp. flour
- 1/2 cup grated cheese
- 1/2 cup heavy cream
- 1/4 lbs. sliced mushrooms
- garlic powder, onion powder, salt & pepper to taste
Easy Chocolate Cake

Very fast & easy. Make sure oven is at 350 degrees abnd cook for 1 hr
- 1 fudge cake mix (Betty Crocker)
- 1 small. pkg. chocolate instant pudding
- 4 eggs
- 1/2 cup oil
- 1/2 cup water
- 1 cup sour cream
- 1 ** 1 bag choc chips
Peanut Brittle (Microwave)

Put sugar & corn syrup in 1 1/2 c glass bowl
- 1 c salted peanuts
- 1 c wh. sugar
- 1/2 c corn syrup
- 1 t butter
- 1 t baking soda
Peanut Butter Crunch

Icing: Bring br. sugar, cream & butter to boil in pan
- Mix:
- 1/2 c br, sugar
- 1/2 c corn syrup
- Boil slowly to dissolve
- Add:
- 1 c Peanut Butter
- 1 t vanilla
- 2 c corn flakes
- 1 c rice krispies
- Place in buttered pan.
- Icing:
- 1 c brown sugar
- 6 T cream
- 2 T butter
- 1 1/2 c icing sugar
Horseradish and Garlic Prime Rib

Preheat oven to 350 F. Lay beef in large roasting pan with bone side down
- PRIME RIB
- 1 (3 rib) prime rib beef roast, about 6 lbs.
- 5 garlic cloves, smashed, plus 2 heads garlic, halved
- 1/2 cup grated or prepared horseradish
- 1/8 cup sea salt
- 1/4 cup fresh ground black pepper
- 1/2 cup EVOO
- 2 carrots, peeled and chopped
- 2 parsnips, " " "
- 1 red onion, quartered
- WILD MUSHROOMS
- 1 T unsalted butter
- EVOO
- 2 lbs. assorted mushrooms
- Leaves from 2 fresh Thyme sprigs
- Sea salt and fresh ground black pepper
- 1/2 cup CAb. Sav.
- 1/4 cup reserved beef broth (drippings from roast) or canned
- 1/4 cup heavy cream
- 1 T minced fresh chives
Cheerio Mallow Bars

1. Microwave margarine&peanut butter in 2 quart bowl for 1 min
- Topping:
- 1/2 c margarine
- 1/4 c peanut butter
- 1 pkg. marshmallows
- 5 c cheerios or rice krispies
- 1 c chocolate chips
- 1/4 c peanut butter
Rum Cake

I prefer to use dark rum (more flavor)
- Cake:
- 1 box yellow cake mix
- 4 eggs
- 1/2 cup water
- 1/2 cup oil
- 1/2 cup rum
- 1 small pkg. vanilla instant pudding
- Sauce:
- 1/2 cup butter
- 1 cup sugar
- 1/4 cup water
- 1/4 cup rum
Spicy Roasted Brussel Sprouts

Clean and Halve sprouts. Combine all other ingredients
- 1.5 Lbs. Brussel Sprouts
- 1/2 cup olive oil
- 1/4 cup rice wine vinegar
- 1/4 cup honey
- 2 T siracha (or more to taste)
- Kosher salt & Pepper
