Garlic Shrimp Pasta

Directions Cook pasta in a large pot of boiling water with vegetable oil until al dente

Salmon En Croute

Preheat oven to 425°F. Heat a large non-stick skillet over medium heat
- Ingredients
- 1 tablespoon extra-virgin olive oil (EVOO), plus some for drizzling
- 1 small onion, chopped
- 1/2 pound button mushrooms and stems, cleaned and chopped
- 2 sprigs dill, chopped
- 1/4 cup flat leaf parsley leaves, chopped (a small handful)
- Juice of 1/2 lemon
- 1 tablespoon Dijon mustard, optional
- 2 hard-boiled eggs, chopped
- Salt and freshly ground black pepper, to taste
- 4 6-ounce salmon filets, skin removed
- 2 sheets frozen puff pastry, 11 x 17 inches, defrosted but still cold
- 1 egg, beaten with a splash of water
- Sauce
- 1/4 cup white wine vinegar
- 1/4 cup dry vermouth
- 1 small shallot, minced
- Salt and finely ground black or white pepper
- 2 sticks cold butter, cut into tablespoon-sized pieces
- 1 tablespoon lemon juice

Lemon Spaghetti with Ramps or Leeks

Yields: 4 Preparation Bring a large pot of water to boil for pasta
- 2 bunches ramps (wild leeks) or 4-5 medium leeks
- 3 tablespoons EVOO – Extra Virgin Olive Oil
- 3 to 4 small cloves garlic, finely chopped
- 1 red chili pepper, such as Fresno chili pepper, finely chopped
- Zest of 2 lemons, juice of 1
- Salt and pepper
- 1/2 cup dry white wine
- 1 pound spaghetti or lemon spaghetti (Buon Italia sells lemon spaghetti)
- 3 tablespoons butter
- 1/2 cup grated Pecorino cheese, plus some to pass at table
- 1/2 cup flat-leaf parsley and mint combined, finely chopped

- 1 (1 lb) package confectioners' sugar, sifted
- 1 ⁄2 teaspoon grated fresh lemon rind
- 3 tablespoons fresh lemon juice
- 1 tablespoon milk
- 1 dash salt
Creamy Queso with Chorizo

- 1 tablespoon vegetable oil
- 6 oz. fresh chorizo, casings removed
- 2 1/2 cups half-and-half
- 8 oz. Velveeta cheese, cut into cubes
- 8 oz. Monterey Jack cheese, grated
- 8 oz. sharp cheddar, grated
- 2 tablespoons chopped canned chipotle chiles in adobo
- 1 1/4 teaspoon kosher salt
