Arugala Pasta Salad

In a large pot of boiling salted water, cook the fusilli until it is al dente

- 1 pound fusilli pasta
- 1 garlic clove
- 2 1/2 cups baby arugula
- Frozen peas - Thawed
- 1/2 small red onion, cut into 1/4-inch dice
- 1/4 cup mayonnaise
- 1/4 cup extra-virgin olive oil
- 1 1/2 tablespoons fresh lemon juice
- Kosher salt and freshly ground black pepper
- Options
- 1/4 cup plus 3 tablespoons pine nuts
- 1/2 cup cilantro leaves
- 1/2 cup basil leaves
- 2 teaspoons coarsely chopped oregano leaves
Oven-Roasted Asparagus

Directions Preheat an oven to 425 degrees F (220 degrees C)
- 1 bunch thin asparagus spears, trimmed
- 3 tablespoons olive oil
- 1 1/2 tablespoons grated Parmesan cheese (optional)
- 1 clove garlic, minced (optional)
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon lemon juice (optional)

- 20 baby white potatoes (1 1/2 lbs)

- 2 large cans of tomatoes
- 1 Can of Black Beans
- 1 Can of Chili Beans
- 1/4 - 1/3 cup chili powder
- 2 tsp ground cumin
- 2 Cans tomato Sauce
- Kosher salt and black pepper
- 1 1/2 Chili peppers
