  • ¼ lb cooked salmon (poached, roasted, grilled, etc) or ¼ lb cooked arctic char (poached, roasted, grilled, etc)
  • 1 tablespoon olive oil
  • ½ small yellow onion , thinly sliced
  • ½ bunch thin asparagus spear , cut into 1-inch pieces
  • 2 ½ eggs , beaten
  • 1 tablespoon milk or 1 tablespoon cream
  • 1⁄8; cup freshly grated parmigiano-reggiano cheese
  • ½ lb penne or ½ lb gemelli pasta or ½ lb casarecce pasta
  • ½ to taste coarse salt
  • ½ to taste fresh ground black pepper

  • use unsalted butter for cookies
  • Line pans with parchment paper. Slide parchment with cookies onto wire racks for cooling
  • Bake all cookies at 325 using convection oven (just about 1/2 the time so watch carefully)
  • Use thin rimless cookie sheets (not insulated)
  • keep a pizza stone in oven to equalize the heat
  • Use shortening for soft cookies
  • Brown sugar also produces soft cookie
  • Butter produces a crispier cookie because the butter melts faster than shortening
