- 14 ounces bittersweet chocolate, chopped
- 12 tablespoons (1 1/2 sticks)
- unsalted butter, diced
- 1/4 cup strong coffee
- 10 large eggs, separated
- 1 1/2 cups plus 6 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups cold heavy cream
- 12 ounces bittersweet chocolate, chopped
- 3/4 cup heavy cream
- 5 tablespoons light corn syrup
- 2 tablespoons unsalted butter
- 1 1/2 cups cold heavy cream
- 1 tablespoon sugar
- 1 pint vanilla ice cream

- For cookies:
- 2 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 2/3 c. butter, at room temperature
- 3/4 c. granulated sugar

- 2 tbsp. finely grated orange zest
- 1/2 c. fresh-squeezed orange juice
- For icing:
- 2 c. powdered sugar
- 2 tbsp. butter, at room temperature
- 2 tbsp. freshly squeezed orange juice, plus extra if needed
- 1 tbsp. finely grated orange zest

STANDING RIB ROAST WITH AU JUS AND CREAMY HORSERADISH SAUCE

Directions: 1. For the creamy horseradish sauce: Place all ingredients into a mixing bowl and whisk together

- Makes 1 (8lb) roast
- creamy horseradish sauce:
- 1 cup sour cream
- 1 1/2 tablespoons grated horseradish (preferably freshly grated)
- 2 teaspoons dry mustard
- 1 teaspoon white wine vinegar
- 1 teaspoon salt
- pinch cracked black pepper
- 1 (8 lb.) standing rib roast (should have 2, usually 3 bones)
- rub:
- 1 1/2 tablespoons kosher salt
- 1 tablespoon minced rosemary
- 1 teaspoon Dijon mustard
- 3 garlic cloves, minced
- 2 1/2 tablespoons extra virgin olive oil
- 2 large yellow onions cut into wedges
- 4 ribs celery, cut into 2 inch pieces
- 4 large carrots, peeled and cut into 2 inch pieces
- au jus:
- 1 tablespoon Worcestershire sauce
- 1/2 cup red wine
