"Beef" and Orzo Stuffed Pepper

This is a great vegan twist on stuffed peppers
- 1 cup orzo pasta
- 4 bell peppers (any colour)
- 2/3 cup tightly packed fresh parsley
- 1/4 cup vegan Parmesan cheese
- 2 Tbsp chopped walnuts
- 1 1/2 tsp dried basil
- 1 tsp salt
- 1 clove garlic, minced
- 1/4 cup plus 1 Tbsp olive oil
- 12 oz faux ground beef-style crumbles
- 1 medium tomato, seeded and chopped
- 12 oz jar tomato sauce
Baked Bean "Meat"loaf Recipe

Holiday Brussels Sprouts

- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/2 cup butter, melted

Creamy Pumpkin Soup

1. Lightly coat an unheated large saucepan with nonstick cooking spray
- Nonstick cooking spray
- 1 tablespoon olive oil
- 3/4 cup chopped leeks
- 2 cloves garlic, minced
- 3 cups peeled and cubed pumpkin or acorn squash
- 3 cups reduced-sodium chicken broth or homemade low-sodium chicken stock (or vegetable broth)
- 1/8-1/4 teaspoon ground black pepper
- 1/8 teaspoon ground cloves or ground nutmeg (optional)
- 1 cup light plain soymilk
- 1/2-1 cup water
- 1 to 2 teaspoons sugar or sugar substitute* equivalent to 1 to 2 teaspoons sugar
- 3 tablespoons pumpkin seeds or pine nuts, toasted (optional)
