- 4 cups cubed (1/2 inch/1 cm) seeded peeled butternut squash, (about half squash)
- 3 TBSP extra-virgin olive oil
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp each salt and pepper
- 3 TBSP lime juice
- 1 tsp Dijon mustard
- 1 can (540 ML) chickpeas, drained and rinsed
- 1/4 cup finely chopped red onion
- 2 cups coarsely torn watercress leaves
Pumpkin Mac and Cheese

Preheat oven to 350 degrees F
- 2 cups dried elbow macaroni (8 ounces)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup whipping cream
- 1 cup whole milk
- 4 ounces Fontina cheese, shredded (1 cup)
- 1 15 ounce can pumpkin
- 1 tablespoon snipped fresh sage or 1/2 teaspoon dried leaf sage, crushed
- 1/2 cup soft bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/3 cup chopped walnuts
- 1 tablespoon olive oil
- Sage leaves (optional)
Veggie "Beef" and Noodles

- 1 x8 oz pkg of vegetarian "Beef" style strips
- 1/2 medium onion, chopped
- 1 Tbsp olive oil
- 10 oz low sodium veggie "Beef" style broth

- 1 lb white button mushrooms, cleaned and thinly sliced

- Nonstick cooking spray
- 2 egg whites
- 1 egg
- 1/2 cup canned pumpkin
- 1/2 cup fat-free milk
- 2 tablespoons maple syrup
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/8 teaspoon ground nutmeg
- Dash ground cloves
- 6 slices high-fiber whole wheat bread, cut into 1-inch pieces (6 cups)
- 1/4 cup chopped pecans, toasted (optional)
- 2 teaspoons butter
- 2 tablespoons maple syrup
Tortellini and Spinach in Garlic Broth

Don't be tempted to cook the tortellini in the soup; they will soak up too much of the broth
- 2 Tbsp olive oil
- 5 cloves garlic, minced
- 3 cup water
- 3 cup stock
- 1 1/2 tsp salt
- 1 lb fresh or frozen tortellini*
- 1 lb spinach, stems removed, washed well*
- Grated Parmesan cheese for sprinkling
- VARIATION
- *Substitute one quart shredded escarole for the spinach
- *Use ravioli instead of the tortellini
Slow-Cooker Lasagne

This can be made as a meat dish by using 1 lb lean ground beef in place of the TVP or soy crumbles
- 2 c rehydrated TVP (or soy crumbles)
- 1 x675 ml jar pasta sauce
- 1 c water
- 1 3/4 c ricotta cheese
- 1 3/4 c Kraft 4 Cheese Italiano Shredded Cheese, divided
- 1/4 c Kraft 100% Parmesan Grated Cheese, divided
- 1 egg
- 2 Tbsp chopped fresh parsley (or 1 tsp dried)
- 6 lasagne noodles, uncooked
Bean Nacho Dip

- 1 green pepper - finely chopped
- 1 red pepper - finely chopped
- 1 red onion - finely chopped
- 3 garlic cloves (or more) - finely chopped
- 1 x475 ml Catalina Low Cal dressing
- 1 x19 oz can black beans - drained and rinsed
- 1 x19 oz can kidney beans - drained and rinsed
- 1 c of Tex Mex shredded cheese
